Okay, we like to eat healthy, and sometimes low carb too. And I like meals that take no longer than 30 minutes....

I can't think! My husband is going to Trader Joe's today and I have been in a food rut for quite some time now! I'm tired of making crockpot chicken. I'm tired of eggs. I'm tired of opening a can of soup or bag of orange chicken help!

Any ideas?

I like to make one dish meals with a lot of vegetables. You can get some ground turkey and brown it in olive oil with chopped onion, chopped green pepper and garlic. You can add some chopped zucchini if you like while you are browning the other vegetables. Add some taco seasoning and or chili pepper -if you have some fresh cilantro chop that but put it in at the last minute of cooking - spice the dish according to your family's taste, add can of crushed tomatoes, a bit of canned or boxed chicken broth and some pre-cooked rice or pasta (al dente) stir then add some thawed frozen sweet corn kernels. Simmer for about 5 to 10 minutes. You can also add some sliced olives brown or green, pimento chopped, grated cheese on top. This dish was my Grandmother's old stand-by and everyone love it. You can make this really restive by serving it in taco shells with slices of avacado or guacamole.

i dont know if you would like it but it is a dish that has three

things. it has meat, tomato, and " well i know you said that you

are tired of eggs " but it has eggs too. this dish take about 25

mins took fry, what you do is you ge a frying pan and preheat

idont know how long but the way i check if it is preheated is when

you wait for couple of mins wet you hand in water and ": do not

dry your hand" sprinkle some on the pan, if the water sizzles it is

not preheted if it rolls into water balls then it is ready. then after you preheated the pan pour some oil, corn oil will do fine and any other oil you have, "if you don't have corn oil" pour the iol just enouph that it covers most of the space of the pan bottom, but first before get out the pan and start heating it get evry thing ready.

things you need to get ready.
1. cut into circles any type of sausage or cut any "meat*"
(* not in circles.)
2. get the eggs out of the fridge.
3. cut tomatos ( into farley small size)"not to small"
4. get the spices ready salt, pepper, and any kind of other spices you like but the main spice is salt. " if you are allergic to ANI FOODS DONT I REAPETE DONOT ADD IT IN THIS DISH.
then you can get the pan ready.

PROCEDURE:

1.after the pan is preheated pour oil and then add sausage first let it fry for like 3mins or so.
2. add the cut tomatos. let them fry for about 8-13mins
"({ constantly stirring})"
3. then add the eggs. while stirring let fry for 1min or so the while stirring add salt and spices, let it cook for another 5mins or so and then it is ready turn off fire plate and serve.

this plate is delicious. well got to go by.

Go to the nearest bookstore, stand in the cookbook section, shut your eyes, and grab a cookbook off the shelf. Buy it, take it home, and get the ingredients to make several of the dishes. Try them, and see what you think.

You will either have jumpstarted your interest in a new area of cooking, or else the "same old same old" will look pretty darned good by comparision.

Don't laugh. . .it's worked for me!

I feel your pain. I am in a food rut too and eating healthy is a must. Try this from the Barefoot Contessa. It doesn't take long, it's healthy and you can use whole wheat pasta.
