Aztec Hot Chocolate
INGREDIENTS:
1 2/3 cups milk
1/2 vanilla bean, split lengthwise
1 red chili pepper, split with seeds removed
1 cinnamon stick, around 3-4"
1 1/2 oz chocolate (bittersweet)
PREPARATION:
Simmer milk in a saucepan with vanilla bean, cinnamon and chili. Heat through for about a minute. Whisk in grated chocolate, and continue to simmer until melted. Remove from heat and let 'steep' for another 10 minutes.
Strain out the spices and serve. Serves 2.

Yes, you should always add a pinch of salt to any chocolate item you are preparing......but did you know a tiny bit of cayenne pepper makes chocolate even better? It does. It is an old Aztec custom.

When making cocoa if you add a little water to the cocoa powder,salt, pepper, and sugar then cook for a couple of minutes before you add the milk; your cocoa will be a lot smoother.

Adding a few drops of Mexican vanilla or almond extract will really give a nice punch to cocoa. Also you can sweeten cocoa with honey or maple sugar - be sure to add a pinch of salt to cut the sweetness. In the ancient days the Aztecs made a chocolate drink with cocoa, sugar, water and ground almonds. Mexican women were so addicted to their chocolate drink that the Church tried to ban it and drinking chocolate in church was forbidden. Today you can buy Mexican chocolate in boxes on line or in Hispanic shops. If you are making Mexican chocolate put the chocolate biscuit in a bit of hot boiling water and then add milk and stir - the directions on the box tell you to put in a blender or pound the biscuit up but you do not have to do that.

Creamy Hot Chocolate

INGREDIENTS
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1/2 cup unsweetened cocoa
1 1/2 teaspoons vanilla extract
1/8 teaspoon salt
6 1/2 cups hot water
8 Marshmallows
DIRECTIONS
In large saucepan over medium heat, combine EAGLE BRAND®, cocoa, vanilla and salt; mix well. Slowly stir in water. Heat through, stirring occasionally. Do not boil. Top with marshmallows, (optional). Store covered in refrigerator.
MICROWAVE

In 2-quart glass measure, combine all ingredients except marshmallows. Microwave on 100% power (HIGH) 8 to 10 minutes, stirring every 3 minutes. Top with marshmallows if desired. Store covered in refrigerator.

Tip

Chocolate can be stored in refrigerator up to 5 days. Mix well and reheat before serving.

Creamy Hot Cocoa

INGREDIENTS
1/3 cup unsweetened cocoa powder
3/4 cup white sugar
1 pinch salt
1/3 cup boiling water
3 1/2 cups milk
3/4 teaspoon vanilla extract
1/2 cup half-and-half cream
DIRECTIONS
Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

Yes, when you make it home-made it does tell you to use a little bit of salt. It's not like it comes out salty though.

I make the recipe on the back of the Hershey's cocoa powder canister.

A lot of cakes and cookies call for salt too.

Never heard of it in hot chocolate, but I'm always willing to give it a shot.

I have heard, and now use, salt when I brew my coffee...it takes away the acidic taste to make it smoother. I don't see hot chocolate as acidic, though.

I do add cream & sugar to my hot chocolate...and make it with whole milk instead of cream when I make it at home. YUM!!

nope and i drink hot chocolate all the time in the winter...how much salt ...post a recipe or something this I gotta try ...I like chocolate covered pretzles does it taste like that? sweet salty ok but without the crunch .

yes. it calls for it on the side of the Hershey Cocoa box. Helps cut a little bitterness of the cocoa.
