I've gone about 7 weeks past the date stamp. Cause the date stamp is an Industry Fresh By Stamp.... But then when I buy eggs they go straight to the refrigerator and don't sit in my car nor on my counter.
Crack it open in seperate bowl, smell it. If it doesn't smell should be useable. But your kinda way beyond what I personally have done.

Eggs generally have long shelf lives -- three to five weeks from the time you take them home. And since most eggs will be cooked, there is less of a safety concern. Don't throw them out if they're past the expiration date; crack one open first. If it still smells and looks good, fry away.
When you cook them, make sure you do so thoroughly. About 1 in every 10,000 eggs contains salmonella bacteria. Thorough cooking kills salmonella. Once cooked, a boiled, unpeeled egg will last a week.

Egge keep alot longer than the expiration date- especially when kept cold. When in doubt- break each egg individually in a cup- check it for color and smell-no blood specks. If good add it - do that with each of the eggs and you will be fine.It is best to do that even if they say the are fresh- seeing is believing!

just because the store has to sell the eggs by that date doesn't mean they are bad. Crack one into a bowl. If it looks like an egg should look, it is okay to use.

no....usually you can go about a week after the expiration date but 2 1/2 months is pushing it. better go ask a neighbor for a couple of eggs...

I would say it would be fine. If the egg looked okay and it didn't smell funny, it is probably safe, plus it is cooked in a cake!!

I would throw those eggs away, and go get some fresh ones. Do they float?? Either way, it's not really safe to eat them in anything!!!

Oh please, they're okay especially since you are cooking them. You will notice a runnier egg white when you crack them and maybe some drying of the albumen. If you crack them and they smell bad then don't use them. Crack them in a separate bowl.

Do you have any eggs left? If so fill a big pot w/ h20 and see if any of them float. If they float they are not good anymore...
