i like my mexican pizzas, a lil work but good.
you need, flour tortillas, ground beef, can of refried beans, lettuce, cheddar cheese, sour cream and a jar of salsa.

heat some cooking oil in a large skillet. one at a time, cook the tortillas in it, flat. not too long, just enough to crisp them. you need 2 per pizza, 1 pizza usually fills me and i eat a lot. Cook the ground beef and crumble it, season with taco seasoning or just a little salt, pepper and garlic seasoning. on each tortilla spread warm beans and then ground beef. put one on top of the other and then put cheese, lettuce sour cream and salsa. cut in fourths or eat with a fork, sloppy but good.

This might be the right sort of 'easy,' though it comes out looking and tasting like it wasn't. (And I note that the definition of "easy" varies pretty wildly.) I'll try to make the directions clear, and if you do make it, please let me know how it came out. I made it last night, and was pretty happy with it.

Leek Gratin

2 leeks
1 tbsp butter
3 tbsp water
2 cloves garlic, minced
3 tbsp heavy (whipping) cream
1/2 tsp pepper
1/2 tsp salt
1 cup good cheeses -- I used romano, parmigiano-reggiano, and old cheddar

Wash the leeks well, and slice (remove darker green parts) into 3/4" rounds. Sauté with the garlic over medium heat in the butter and 3 tbsp water for fifteen minutes -- until they're soft all the way through.

Turn them into an oven-proof dish. Add cream, salt, pepper, and half the cheese; mix. Top with the remaining cheese. Bake, covered, at 350F for 30 minutes, then uncovered for 20 minutes more. If it's not browned on top, let it sit under the broiler for a minute or two.

Check if it needs more salt or pepper, but that's about it. It's a great side dish.

And, kudos for saying 'enough with just posting URLs for recipe sites, please' (more or less).

Cheese Ravioli w/ Tomato & Artichoke Sauce
INGREDIENTS
2 (9 ounce) packages fresh cheese ravioli
1 teaspoon olive oil
1 tablespoon olive oil
1 pound roma tomatoes - peeled, seeded and chopped
1 (6.5 ounce) jar marinated artichoke hearts
1/2 cup chopped green onions
3 cloves crushed garlic
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

DIRECTIONS
Cook ravioli according to package directions.
While the pasta is cooking, prepare the sauce. In a large nonstick skillet, heat 1 tablespoon oil over a medium high flame. Add tomatoes, artichokes, scallions, garlic, and salt and pepper. Cook 2 to 3 minutes, stirring occasionally, until vegetables are warmed through. Remove from heat.
Drain pasta well. Transfer to a large bowl, and toss with 1 teaspoon oil. Add half of the sauce to the ravioli; toss gently, but thoroughly to mix. Transfer ravioli to a large serving platter. Pour remaining vegetable sauce over ravioli. Garnish with Parmesan cheese.

**Toss together a quick salad: Romaine Lettuce, Shredded & Grated Parmesan Cheese, Cracked Black Pepper, Ceasar Dressing & Croutons. And you've got yourself a great meal!!!**

chicken supreme

4-6 boneless/skinless chicken breasts
1 cup hidden valley ranch dressing

pound the chicken breast down to 1/4 inch between 2 pieces of wax paper. place in plastic container add ranch dressing to coat all pieces. cover and refrigerate at least 4 hours though overnight is best.
heat a large skillet and melt 3 tbsp. butter or margarine place the chicken in the skillet and brown on both sides ( no need to take off all the extra ranch dressing) until done ( about 5-6 min. or until no longer pink)
I usually serve it over rice-a-roni wild rice (follow the directions on the box)

you can also make awesome chicken fingers with this marinated chicken.

follow the marinating direction as stated above. only this time cut the chicken into 1 inch strips.
in a zip lock bag add:
2 cups flour
2 cups corn flakes crushed
salt and pepper to taste
garlic powder to taste ( couple shakes usually is enough)
onion powder to taste
put half of the chicken in the bag, close it and shake to coat.
fry in hot 350 degree oil for 3 minutes or until they float. place on paper towels to drain off excess oil. repeat the process with remaining ingredients.
serve with any type of dipping sauce

This is awesome, and easy, one of my husband's latest for seafood, but I suppose it could be for any meat.

He bought about a dozen tubes of herbs, garlic paste, chili paste, cilantro paste among them. He mixes and matches them until he comes up with the right flavor for a dish.

In a medium hot pan drizzle some olive oil, add a couple tablespoons of butter, and about two inches each of the following pastes from the tubes:

garlic, cilantro, chili, basil. Stir the ingredients well as the butter melts. You can pour this over any steamed shellfish at this point and it will be terrific or you can complex the sauce by adding a bit of flour, just enough to make a loose rue. Cook until bubbly and then add about a cup of milk, very slowly, until it is all thickened.

This sauce is perfect over a thick juicy steak as well.

Okay, this is something we make at my house that everyone loves and is easy to do.

1 lbs of elbow noodles
1 package of Hormel diced ham, not sure of the size, but you can generally find them near the ham slices.
1 jar of Ragu cheese sauce ( in the pasta isle of most stores )
bread crumbs

boil your noodles like normal and drain. In a casserole dish, mix the noodles, diced ham, and cheese sauce. Sprinkle bread crumbs over the top evenly. Bake in over at 350 for about 35 minutes. Serve with garlic toast.

In my house I have to double the recipe, my husband takes what ever is left over to work the next day and they eat it up like crazy. Very simple, but seems to be a hit with everyone.

First off Engagement Chicken is soooo good regaurdless of it you are trying to hook a man or not.

1 whole chicken (approx. 3 lb.)
2 medium lemons
Fresh lemon juice (1/2 cup)
Kosher or sea salt
Ground black pepper

Place rack in upper third of oven and preheat to 400 degrees. Wash chicken inside and out with cold water, remove the giblets, then let the chicken drain, cavity down, in a colander until it reaches room temp (about 15 minutes). Pat dry with paper towels. Pour lemon juice all over the chicken (inside and outside). Season with salt and pepper. Prick the whole lemons three times with a fork and place deep inside the cavity. (Tip: If lemons are hard, roll on countertop with your palm to get juices flowing.) Place the bird breast-side down on a rack in a roasting pan, lower heat to 350 degrees and bake uncovered for 15 minutes. Remove from oven and turn it breast-side up (use wooden spoons!); return it to oven for 35 minutes more. Test for doneness — a meat thermometer inserted in the thigh should read 180 degrees, or juices should run clear when chicken is pricked with a fork. Continue baking if necessary. Let chicken cool for a few minutes before carving. Serve with juices

Its great with red potatoes and asparagus.

And the easiest desert every that everyone loves....

Eclair Pie!!

2 boxes of FRENCH vanilla pudding
(when you prepare both boxes substitue one of the cups of milk with a cup of cool whip...you can add more cool whip if you like)

Then fill the bottom of the pan with whole graham crackers..then pudding, then graham crackers, then more pudding then one more layer of graham crackers.

Take 2 cans of chocolate fudge frosting and melt for roughly 30 seconds until pourable. Pour over top and smooth.

Cover and let cool in fridge over night. Its so easy and soo good!!

Hope you try them both! Goodluck!
