First you need a decent size pot. Fill the pot about 2/3 full of water. Put a tight fitting cover on the pot and turn the burner on high. When the pot comes to a boil ~ about 5 minutes later ~ take the lid off and pour the noodles into the boiling water. Stir then turn the fire down to about medium, or half way between high and low. Let the noodles boil for about 6-7 minutes. You will know they are done when you can take a fork and cut one of the noodles in half against the wall of the pot.

While the noodles are cooking heat up the alfredo sauce. It's really easy in a microwave. Just pour the sauce in a bowl, cover with a paper towel and heat on high for about 2 minutes. Stir the sauce and make sure it is hot enough. If not, nuke for another minutes or two.

Drain the water off the noodles when they are done and pour the alfredo sauce over the noodles.

Here's a simple recipe, you can play with and add lobster, shrimp, or chicken, broccoli or whatever you'd like...

INGREDIENTS
10 ounces fettuccini pasta
1/2 cup butter
5 cloves garlic, chopped
1 cup heavy cream
1 egg yolk
2 cups freshly grated Parmesan cheese
2 tablespoons dried parsley
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add fettucine pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large skillet melt the butter and add the chopped garlic. Cook on low for about 5 minutes, stirring often, making sure not to burn the garlic.
Pour about a 1/4 cup of the heavy cream into a small bowl. Add the egg yolk and beat together; put aside. Pour the remaining cream into the frying pan. Increase the heat to medium-high. As the cream starts to boil, mix rapidly using a whisk. Slowly add the cream/egg mixture. You do not want the egg to curdle. Continue whisking until well blended.
Add 1 cup of the Parmesan cheese and continue to mix the cream. Pour in the remaining Parmesan and the parsley, mix until smooth. Immediately remove from stove. Serve over cooked pasta.

In my opinion, Fettucine Alfredo is a pretty heavy dish (whoa, whipping cream, butter, and cheese?!)... so I would serve it with a very light pairing: 1) appetizer - a salad made of baby spinach, tomatoes, croutons, and shredded parmesean, tossed with a balsamic vinaigrette 2) vegetable - steamed broccoli. The green looks very pretty with the creamy white of the chicken, pasta, and sauce. It also adds some much needed nutritional value. 3) dessert - seasonal fruit or sorbet to cleanse the palatte. Fettucine Alfredo is one of my all time faves, and you cannot go wrong. I just know that I personally hate feeling like I've just eaten sinfully, and I like to balance that with some good stuff!

I cheat on my alfredo sauce too with jarred sauce. But first I saute sliced mushrooms and garlic in a little butter until softened, dump in the jar of sauce and heat through.

Then I dump that over my pasta. Garnish with some chopped parsley or cilantro and shredded Parmesan and it looks and tastes very professional.
