Skeleton and Brain Dip

Lettuce leaves
1 cup KRAFT Ranch Dressing
2 cups assorted cut-up fresh vegetables, such as bell pepper strips, cucumber slices, snow peas, mushroom slices, celery sticks, carrot sticks, cherry tomatoes, broccoli florets, cauliflower florets

1. LINE small bowl with lettuce leaves; fill with dressing. Place near one end of a large serving platter.
2. ARRANGE vegetables in a skeleton shape on platter, using the bowl as the head of the skeleton.

Monster Claws

2 tablespoons flour
1 tablespoon plus 2 tsp cajun seasoning -- divided
1 pound boneless skinless chicken breasts -cut lengthwise into 3/4-inch strips
1 1/2 cups cornflake crumbs
2 tablespoons chopped green onions
3 eggs -- lightly beaten
1 red, yellow or orange bell pepper -- cut into triangles
Barbecue sauce

Preheat oven to 350ºF. Lightly grease baking sheets. Place flour and 2 teaspoons cajun seasoning in large resealable plastic food storage bag. Add chicken and seal. Shake bag to coat.

Combine cornflake crumbs, green onion and remaining 1 tablespoon cajun seasoning in large shallow bowl; mix well. Place eggs in shallow bowl. Dip each chicken strips into eggs and then into crumb mixture. Place coated chicken strips on prepared baking sheet. Bake chicken strips 8 to 10 minutes or until chicken is no longer pink in center.

When chicken is cool enough to handle, make 1/2-inch slit in thinner end. Place bell pepper triangle into slit to form claw nail. Serve claws with barbecue sauce for dipping.

Bat Wing Soup

4 garlic cloves, peeled

2 tablespoons vegetable oil

4 cans (14-1/2 ounces each) stewed tomatoes

1/2 cup whipping cream

6 slices bread, crusts removed

2 tablespoons butter or margarine, softened

2 teaspoons Italian seasoning

In a saucepan, saute garlic in oil until tender. In a blender or food processor, process garlic and tomatoes in batches until smooth. Return all to the pan; bring to a boil. Reduce heat to low. Add cream and heat through.

Follow directions to cut bat wings from bread. (To make bat wings, remove crusts from bread. Flatten with a rolling pin. Using a kitchen shears, cut each slice in half diagonally, cutting wavy lines to resemble bat wings.)

Place on an ungreased baking sheet. Spread with butter; sprinkle with Italian seasoning. Bake at 400° for 5-8 minutes or until golden brown, turning once. Add two wings to each bowl of soup. Serve immediately.

You can make an easy pumpkin cake by taking a bundt pan, baking two bundt cakes, and then putting the two flat edges together. Then cover it in orange frosting and add some decorations to make it look like a pumpkin. I made this last year, and unless you are feeding more than five people, I would see if there is a smaller size bundt pan available because not only was it a large round size, it was also very tall. Maybe only fill the mold half way so it isn't so tall.

This is an incomplete idea, but I remember a Halloween meal some friends made where they added food coloring to pasta water and got these great weird colors. I was thinking, why not try that with cellophane noodles and red food coloring? It'll look like entrails: blood red, clear noodles. Just mix with vanilla or chocolate pudding.

Kids of all ages love popcorn balls! Make these for special treats.


Fruit-Flavored Popcorn Balls

1 cup white corn syrup
1/2 cup granulated sugar
1 (3-ounce) package fruit flavored gelatin powder, any flavor
10 cups popped popcorn
1/2 cup butter
In a pan over medium heat, stir together corn syrup and sugar. Bring to a boil; remove from heat. Add gelatin powder and stir until dissolved.
Place the popcorn in a large mixing bowl. Pour syrup-gelatin mixture over the popcorn. Toss until popcorn is coated. Butter hands and form the popcorn into balls. Store on waxed paper or in wax-paper lined, air-tight containers until ready to serve.
Makes 10 servings.

Note: Add dried fruit or peanuts for a special treat.

After gutting a pumpkin ..take the seeds and place them on a sprayed cookie sheet. Sprinkle lots of salt on them and put it in a preheated oven 250 degrees and bake for about 15 mins. Let cool 5 mins and eat.

Bat Wings

1 dozen chicken wings
1 cup soy sauce
1/3 cup honey
1 teaspoon ginger, crushed and chopped

Mix together soy sauce, honey, and ginger. Marinate chicken overnight. Grill in oven or barbeque

Easy Caramel Corn

3 quarts popping corn
1 cup brown sugar
1/4 cup corn syrup
1 stick of butter
1/4 teaspoon salt
1/2 teaspoon baking soda

Put popcorn in a heavy paper bag. Melt butter in a saucepan and mix together sugar, syrup, and salt. Add 1/2 teaspoon baking soda and stir well. Pour into paper bag and stir with a wooden spoon. Put bag in microwave and cook on high for 1 1/2 minutes. Take out and shake well. Cook for another 1 1/2 minutes. Shake bag again and pour into a large container. Serve in paper baggies that kids can decorate.

Mummy Dogs
Perfect for a quick Halloween dinner.
INGREDIENTS:
Hot dogs
Ready-made croissant dough
Mustard and ketchup
PREPARATION:
Cut the croissant dough into strips. Wrap hot dogs to look like mummies. Bake at 375 degrees for 12 to 15 minutes or until light golden brown. You can make faces with ketchup and mustard.

I make a cauldren of chili and top it off with "carved pumpkin slices of kraft singles" use a smily face pumpkin cookie cutter, or a small knife to cut out the cheese slices, when you put them on top of the hot chili right before serving they warp into some pretty cool shapes!
