When burning the CD in iTunes, make sure you select it to burn as an Audio CD. As you are using Mac OS 9, your iTunes will be very outdated, only version 3 max I believe. iTunes 7 is now out.
I would strongly recommend upgrading to Mac OS X, it should only set you back about £90, even cheaper if you look on Ebay or buy a new mac.

If you have a pre-OS X computer, you probably are using an after-market CD burner. That may or may not work with iTunes without some tweaking. Try it and if it doesn't recognize your burner, install Disc Burner and Authoring Support (different versions for 9.1 or 9.2). If it is still no-go, you might get it to work with Patchburn. BTW, if this is an after-market burner, there is no guarantee that OS X will make it burn.
