There are several ways to make them.
1.Bake them at 400* for about an hour.
2.Boil and mash them (with or without skin) and you can add any flavoring you like, such as brown sugar or herbs.
3.You can put them in a caserole in place of regular mashed potatoes.
Here are some recipes where sweet potatoes, or yams, have been used.


1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1/2 teaspoon dried hot red pepper flakes
1 teaspoon kosher salt
2 lb medium sweet potatoes
3 tablespoons vegetable oil



Preheat oven to 425°F.
Coarsely grind coriander, fennel, oregano, and red pepper flakes in an electric coffee/spice grinder or with a mortar and pestle. Stir together spices and salt.

Cut potatoes lengthwise into 1-inch wedges.

Toss wedges with oil and spices in a large roasting pan and roast in middle of oven 20 minutes. Turn wedges over with a spatula and roast until tender and slightly golden, 15 to 20 minutes more.

Makes 4 to 6 servings.









6 tablespoons butter, softened
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2/3 cup evaporated or regular milk
1 1/2 cups peeled finely shredded sweet potato
2/3 cup chopped walnuts or pecans
PREPARATION:
In a large mixing bowl with hand-held electric mixer on medium speed, beat butter and sugar until light and fluffy. Beat in egg and vanilla until well blended.
In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
Stir into the butter mixture alternately with milk, mixing just until dry ingredients are moistened. Stir in sweet potato and chopped nuts. Spoon batter into greased muffin cups, filling about 2/3 full. Bake at 375° for 25 to 30 minutes, or until centers spring back when pressed with fingertip. Cool in pan on rack for 5 minutes. Remove from pan and serve muffins warm. Makes about 1 dozen sweet potato muffins.

1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
2 large sweet potatoes
1/2 tablespoon olive oil

Preheat oven to 375 degrees.
Combine the paprika,brown sugar, black pepper, onion powder,thyme, rosemary, garlic powder, and cayenne pepper.
Slice the sweet potatoes in half lengthwise; rub the halves with olive oil, then rub the seasoning mix over the open half of each potato.
Bake for 1 hour, or until the sweet potatoes are tender.

Wash the sweet potatoes well with dish soap and water and rinse. Pat dry. Turn oven to 400 degrees and put the potatoes directly on the oven rack and put a cookie sheet on the rack below to catch the drips. Bake for 45 - 60 minutes. You'll know their done when (using an oven mitt) squeeze the potato and it will be soft. Take the potatoes out of the oven, split the top of each one open and drop about 1/2 tablespoon butter in each top and sprinkle with cinnamon and brown sugar.

Your question prompted me to browse the web. I have not considered eating sweet potato or yam for a few years now, but latterly I have taken an interest in Sub Saharan Cuisine.

Nigeria and Ghana both have Yam Festivals, and Yam is very similar to Sweet Potato. But you wanted a simple recipe, so I won't tell you about FuFu - it's very labour intensive to do authentically - much pounding -and uses Yams, Cassava or Plantain not Sweet Potato.

So when I do a Nigerian Casserole shortly, I may accompany it with this Sweet Potato recipe. It tempts me, so I will share it.

Sweet Potato and Chive Pancakes
makes 12 pancakes

1 pound sweet potatoes, cooked, peeled, and mashed
1/3 cup flour
I teaspoon cornstarch
1 whole egg
2 egg yolks
1/2 cup milk
1/4 teaspoon each salt and freshly ground black pepper
1/2 cup chopped fresh chives
4 tablespoons butter or oil for frying
1 cup plain yogurt or sour cream
1 teaspoon ground cumin
In a food processor, combine the potato with the remaining ingredients, except the butter, yogurt, and cumin, until smooth. In a large skillet, heat the oil. Spoon the batter into the pan to form 2-inch pancakes. Fry for about 45 seconds per side, or until golden-brown. Serve immediately. Combine the yogurt with the cumin and serve over the pancakes.

We make sweet potato chips...pretty easy.
Heat oil in deep pot or large cast iron skillet (That's what I use.).
Pare sweet potatoes and slice into 1/8 inch rounds. pat dry with a towel.
I put one slice into the oil when I think the oil's hot enough (What? Use a thermometer? Where's your sense of adventure?). If it skitters around the pot and the oil bubbles around the slice, you're ready to add more. I tend to overload the oil with slices, but it works better if you only put in a half dozen or so at a time. When the slices start to look golden brown around the edges, scoop them out with a strainer and drain on paper towels or newspaper. While they're still really hot, I sprinkle on some Kosher salt. Best eaten hot and crispy.

My favorite way to eat sweet potatoes are in the microwave just like a baked potatoe.

Wash a fresh sweet potato, cut in half or prick holes, place on a microwave safe plate and microwave just like you would a baked potatoe.

Serve with butter on top or add some cinnamon or whatever toppings you like.

Peel potatoes,(if you like) cut in half longways, then cut each in thirds. Melt 1/2 cup butter in baking pan. Put potatoes in pan. Mix 1/2c. water, 1 cup brown sugar together. Pour on top. Cover and bake for 30 minutes in 350 oven. Remove cover and cover with mini marshmallows and bake for an additional 15 minutes or until brown. A quick method for this is to preboil your potatoes before baking. It will cut your time in half.

drain can sweet potatoes and put in mixing bowl and add 2 tbsp of butter and 1/2 cup brown sugar 1/2 tbsp cinnamon..1/2 teaspoon caradamon....1/2 teaspoon nutmeg and 1 egg andwhip like mashed potatoes and make round balls and bake in oven at 350 until firm...

Boil them like you would white potatoes. Cut them up into quarters first. Then, mash them with a hand mixer. add orange juice instead of milk. Put them into a baking dish and add brown sugar on top. heat at 300 for 15 minutes and then add small marshmellows on top. heat untill toasted.
