A couple of things....
You can fry them in oil like french fries.
Bake them - 400 for 1 hour or microwave for 15 min.
Skin them, cube them, boil them (stock is better than water), when they are soft, mash them with a little cream and butter (s&p to taste).
Cube them, drizzle them with olive oil, maybe even mix a few other root veggies such as parsnips, carrots, potatoes, etc... toss them with some herbs - thyme or rosemary, s&p, and roast them in the oven 350-400 for an hour or so.
These are just ideas but play around with it.

Open a can of yams. Drain most of juice and empty into a shallow baking pan with remaining juice. Top each potato with 1/2 teas. of butter and 1/2 teas brown sugar. Bake at 350 for about 20 minutes. Doesn't get much easier - or more delicious!

Spicy Sweet Potato Balls
Serving Size : 6
4 med sweet potatoes, cooked and peeled
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
Finely chopped walnuts
Place cooked potatoes in mixing bowl and add salt, cinnamon, nutmeg and ginger. Mix well. Shape into balls, using about 1/4 cup mixture for each. Roll balls in chopped walnuts and coat evenly. Place balls on baking sheet and bake at 350 degrees for 20 minutes.

Wash them, then:
A- Wrap in foil and bake them at 350 for about 20 minutes, until tender. Then top with cinnamon (heart concious), sour cream, margerine, or any other usual potato topping, keeping in mind that these are sweeter.
B- Boil them until tender, then drain, mash, and stir in a little butter to soften them.
C- Fry them as patties or "french fries". They are a healthy and delicious alternative!
D- Buy them canned, drain and place in a casserole dish. Top with margerine, cinnamon, nutmeg, and marshmallows. Bake at 350 until marshmallows have melted. This has been served at the Thanksgiving and Christmas dinners that my grandmother has since I was little. It is my favorite way to eat them, and deserves a place in the comfort foods section of anyone's cookbook!

Cook sweet potatoes in boiling water until soft. Drain and place back in pot. Mash and add sugar, butter and cinnamon. Mix well and place back on the heat. Mix until the extra liquid has been abrobed and serve with your fave meat and extras.

Slice them about 3cm thick and layer them in a baking dish with brown sugar and marshmallows (the white ones) and bake in oven till soft.. Makes a great desert!!

prick it then bake in micro for a few mins. open, sprinkle with a little salt and put a big blob of cream cheese on top, mmmmmm! so easy and soo good!
