What does it represent, and why did Muhammad adopt it as a symbol for Islam?

it is not the official symbol of islam, when the turks defeated the byzantines, they adopted these byzantine symbols because they thought it brought good luck. The crescent represented the local goddess of the hunt and the start represented the virgin mary(may Allah be pleased with her), this idea that it brought good luck was reinforced when they defeated an invading army from greece. Muslims should be wary of this symbol, as it may be considered shirk(polytheism, disbelief).

Muhammad didn't adopt it, but it's more as a decoration. the moon represent the month of Ramadan, this is the most important month in Islam of which the Quran has revealed. we tell the beginning of Ramadan by looking at the shape of he moon. if the moon shaped in certain way, then we declare the beginning of Fasting in Ramadan.

The crescent that indicates the birth of muslim months. I think this is rather after the life of Prophet Muhammad but not sure when exactly it was adopted.
