Onion Chutney
6 cup Chopped sweet onions
1/2 cup Fresh lemon juice
2 tsp Whole cumin seed
1 tsp Whole mustard seed
1/2 tsp Tabasco sauce
1/4 tsp Red pepper flakes
2 tsp Ground chili pepper
1/4 cup Light brown sugar
1 x Salt to taste
Combine all ingredients in heavy saucepan over medium heat. Bring to boil, stirring frequently. When mixture comes to a boil, immediately remove from heat and pack into hot sterilized jars. Vacuum seal.
Makes 4 1/2 pint jars.
OR,
Onion Chutney ( Piyaz Ki Chutney )
4 lrg onions chopped
2 tsp ginger shredded
2 tsp garlic shredded
150 gm mint leaves chopped
300 gm coriander leaves chopped
1 tsp sugar
1 tsp lemon juice
salt
Combine all the ingredients add a little water and grind to a smooth thick puree in a blender.
Stir well before serving.
Store in the refrigerator for up to 3 days until needed but serve at room temperature.
Onions are used in a thousand and one ways in indian cookery. This is an all purpose chutney that can accompany kebabs samosas or any snack.

Description

Ingredients
Small Onion:1 cup
Tamarind :some
Cumin seeds:1 tsp
Red chill:5 nos
Salt to tast
Oil
Mustard
Curry leaves
Preparation
Pour oil in a pan.Put the onion and fry it for few min.Then put the red chilli and fry it.
Grind the onion,redchilly,Cumin seeds,tamarind,Salt.Make is paste.
Pou oil in a kadai and out the mustard after popped put curry leaves.Then pour the grinded paste add some water.Cook for five min.Serve with idli,Dosa.
Tips
Don't fry the onion brown colour.

Grind the onions, green chillies, and ginger to a fine paste without using any water. Pour the paste / chutney into a bowl.
Heat the oil in a pan on medium level for about 2 minute(s) till it is hot enough. Add the cumin seeds. Let them splutter and then add the red chillies. Fry briefly and pour it on the chutney.
Add salt and lemon juice to the chutney.

I have an apple and onion chutney
I need a second.
5 Large cooking apple
500g Onion
1.5 cups sultanas
500g Brown sugar
3 cups Vinegar
.5 cup water
2 tsp Dry mustard
2 tsp salt
1/4 tsp white pepper
1/4 tsp black pepper
Peel Apples and onions, place in sauce pan with all ingredients
Stir over heat till boiling
Cook slowly for at least 2 hours
Bottle in small jars when cooled.
