When I was younger, my father used to save the leftover rice and mix it with condensed milk and evaporated milk to make a desert. What is this called and what proportions should I use of the ingredients? I'd really love to make this for my kids.

Sounds like rice pudding.

1 cup rice
3 cups water
2 cup milk or substitute 1 cup for 1 can condensed milk.
2 Cinnamon sticks
Sugar to taste.

Add rice, Cinnamon sticks, and water to a pot on high until it reaches boiling. Turn down heat to low and add milk and sugar. cover and simmer, stir every now and then to prevent spill over from milk. Cook until rice is soft.

Elizabeth Acton's-- rich rice pudding:

4 ounces short grained rice (110grams )
! i/2pints milk (845mls) 2 ounces butter (50 grams )
2-3 ounces sugar ( approx 75 grams )
3 eggs
grated rind of !/2 a lemon
1/2 grated whole nutmeg
2 tablespoons of sweetened condensed milk

preheat oven to 300f (150C)
well buttered 2 pint ( 1 litre) baking dish,

method;

put rice into saucepan add milk
bring slowly to simmering point
let it cook very slowly ( 10 minutes )
till the rice is just tender

add sugar and butter
stir till dissolved and melted
stir in condensed milk
allow to cool a little,
stir in the two eggs ( well beaten)
and the lemon rind

pour the mixture into the buttered baking dish
sprinkle with freshly grated nutmeg

and bake for 30- 50 minutes
the top will be golden brown

serve with cream

Sounds like what we call "kheer".... though its made slightly differently. heat milk in a heavy bottomed vessel and reduce it to half. add soaked rice to it. keep stirring it till rice get cooked then add sugar and dry fruits like raisins and chopped almonds. in the end add soaked saffron and remove it from heat. cool and eat.

Try it once even if this is not what you were looking for.. it tastes divine .. :)

I remember getting that as a child. My mother would then put in the oven until there was a brown skin over the top. My brother and I used to fight for the skin, your making me feel nostalgic.
