I open my eyes but I can't move. Why is that?

It's because at one cycle of sleep your body actually paralyzes itself to keep you from hurting yourself when you are dreaming. Maybe you wake up suddenly while you are in that stage of sleep and your body hasn't had time to move itself through the cycles of sleep. You shock your body when you wake up suddenly, like by an alarm or phone ringing or other noise.

It's one of the many symptoms lumped under the banner of Narcolepsy. It is a sleep disorder.
Your body produces chemicals that paralyze your body during sleep. That's why you don't get up and actually run a marathon just because you're dreaming of one. In your case you may still be in that state after your mind as come back to consciousness .
You can look at it as the opposite of sleepwalking. It should only last a few moments then subside, if it lasts longer that several minutes you need to see a doctor.
