scrub skins with warm water and veggie wash to clean. rinse thoroughly.
poke holes with a meat fork. (two big sharp points)
rub whole skin with vegetable shortening.
put oven at about 200 fahrenheit
bake until you can stab fork with only a little resistance.
Too long and potato will be mushy.
You now have a perfectly prepared potato.
Slice down the center the long way and fill with your choice of butter or margarine. I even eat the skins with the potato, they are yummy when baked this way. There is actually more flavor in the skin than in the center. that is why I scrub them clean.

Enjoy.....

Very easy and much nicer!! Oven on 180 (centigrade) - cut your x as you would if you were microwaving, lightly rub the skin with a little salt (remembering your 6grms a day ...) and stick in the oven for about 40-60 mins (depends how many yr cooking). Don't keep opening the oven to check cos they do take a bit of time. The skin goes all crispy and just yummy.

Poke a few holes in some large, clean russett potatoes with a fork and place them directly on the oven rack. Bake them at around 375. Check them every 1/2 hour or so, they're done when you can insert a toothpick in them without much effort. I know some people wrap them in foil, but I think that is just to keep them warm after baking.

This is a nice recipe for potatoes. Not whole baked potatoes, but really tasty! Cook a couple of potatoes. Cut them in slices and place a couple of layers: potato with salt and pepper, cheese, and repeat. End with layer of cheese and then pour over some pouring cream. Bake in oven for about an hour. Can serve it hot or cold.

You can either wrap them in foil for one and a half hours then take the foil off for the last half hour to crisp the skins up or put them in the oven without foil on a tray with a little salt on. The salt soaks up all the moisture from the skin and they come out of the oven really crispy and tasty. If you use foil though they come out all nice and fluffy inside.

Prick spuds all over then put in middle of the oven straight onto the shelf.... gas 5 / 180 electric..... one - one&half hours... turn over half way through. Test with a knife to see when cooked.. should be crispy on outside and soft inside. When cooked make a small cross in the top, then using a teatowel to protect your hand, gently squeeze to open up potato.... (cutting them alters the texture of the potato) then add whatever filling you like.....

Wrap it in tin foil, stick it in at about 180 degrees. Takes approximately 1.5 hrs ... depending on the size of the potato and quality of oven. Keep poking a knife in toward the end, when you can push it throgh easily ... it's done! Take the foil off for 15 mins at the end to make it nice + crispy. MMMMM
