Nikon Capture NX works really well with any Nikon camera. I like it because it offers quick reads of NEF (RAW) files and when you change something it never writes over the original file. You always have that to work from and you can't accidently write over it. Does quick batch conversion from NEF to JPEG or TIFF.
It is a whole lot cheaper than PhotoShop.

Photoshop Elements 5.0 is a great choice. I've been using these "mini" versions since P.E. 2.0 came out. There's not a whole lot you can't do with 5.0. In fact, 3.0 was a giant leap from 2.0, so 3.0, 4.0 or 5.0 are all good choices, if you have a friend with an "old copy" lying around. I have Nikon DSLR's, too, in case you want to be triple sure that there are no compatibility issues. It's easiest if you use a card reader, also, and skip the Nikon software, unless you are shooting in RAW and need to convert your images before Photoshop can deal with them.

Photoshop supports pretty much all file types. You're going to be save your shots as a raw file anyway. I'm sure the D80 saves to raw. There's also tiff and jpeg. But raw is best going into the application. And please, get the full Photoshop, not the Elements version. I've been fooling around with Photoshop since Version 5. I've still only learned maybe half of it. Too much fun.
