Some Asian countries pickle them and served with shrimps. I think if you left it a couple of days to fully ripen it should be okay to eat.

Green mangos as far as I know are great for all kinds of pickled recipes.

A couple of recipes:

Green Mango Sauce

1 cup sugar
3 cups green mango slices
1 cup of water

Combine mango slices with sugar and water in saucepan.
Cook over medium heat until it has the consistency of apple sauce.
------------------------------
Mango Dip

Make an dip by mixing diced mango, lime juice,
minced chilli and onion with cream cheese or creamed
cottage cheese.

Did it all the time as a kid back in Hawaii. All us kids, even adults ate it like that. The best way is to pickle it. But if you can't wait, get some shoyu ( you call it soy sauce) and sugar and dilute the sugar till it melts, add some water to thin it out just a little. Slice the mango thin and marinate it in the fridge. I call this fast teriyaki
style. Not truly teri sauce, missing some ingredients.

Yes, you can eat green mangoes but they are very sour. You need to toss them in salad or make them into chutney. There are, however, green mangoes which are just as sweet as the ripe mangoes but you can only get them in Thailand.

personally i'd wait til it was soft and ripe. It will ripen in a few days. i've heard people say raw mangoes taste good with salt. I don't want to find out. If u do take the risk please let me know.

(: Green mangoes aren’t ripe yet. You could eat it if you wanted to, but I’d advise you wait till it ripens to an orangey colour.

well if its a green mango then you can tell by the colour so feel it and it should be soft with out being too soft.
if its a red mango then wait until it turns all red.

yes it's edible, but it'll taste better when it's fully ripe.
