As a professional chef, I must agree that France has lead the way in the art and craftsmanship of pastry. Lets not forget about Greece, Italy and Germany who have always offered outstanding bakery and pastry items as well. I also agree that Japan is certainly up and coming in this field, but they are still breaking into this by comparison, in 5-7 years THEY WILL become trend setters in the pastry world.... just a conservative prediction. And, YES, France will still be good.

The french don't have the best. Japan is an up and coming pastry capital. They're pastries seem not as sweet and rich.

European pastries use good ingredients. They know the texture to enhance the flavor and tasty sweetness. Don't forget for hard dedication and my favorite pastry is fruit tart cakes. I don't like dry so that's they are not dry as other countries.
