I recently heard about the christmas cake and was wondering if anyone had a recipe for it. Thanks!

TRADITIONAL CHRISTMAS CAKE.
Ensure this cake is made 3 weeks before Christmas, and then ice one week before the occasion.
Ingredients
*12 oz plain flour *1 tsp. cinnamon *1 tsp. mixed spice
*½ tsp. salt *4 oz candied peel *4 oz cherries *2 lb. Dried fruit
*4 oz blanched almonds *4 eggs *4 tbsp. sherry *Finely grated 1 lemon *8 oz margarine *8 oz sugar *1 tbsp. black treacle

Method:
 Sieve together all the dry ingredients.
 Mix the peel, fruit, cherries, chopped almonds and lemon rind.
 Whisk the eggs and sherry together.
 Cream the margarine, sugar and black treacle until soft.
 Add the flour and egg mixtures alternately to the margarine.
 Stir in the fruit mixture.
 Put into an 8-9 inch tin, lined with greaseproof paper round the sides and at the bottom. Tie a double band of brown paper round the outside of the rim, standing well up above the top of it.
 Put in the middle of a hot oven. Bake for 31/4-31/2 hours at gas mark 3 for the first 11/2 hours, and then decrease to gas mark 2 for the remainder.
 Cool the cake in the tin, then store in an airtight container.
Note: The rich cake can be served cold or hot with custard or double cream.

CHRISTMAS TREE CAKE

5 c Confectioners' Sugar
3/4 c Crisco Shortening
1/2 c Water
1/3 c Non-dairy Creamer
2 ts Vanilla Extract
1/2 ts Salt
1 tb Green Food Coloring
Peppermint Candies
Pretzel Rods
Large Gumdrops

Preheat the oven to 350~F. Grease and flour a 13x9
pan. Prepare, bake and cool cake following package
directions.
For decorator frosting: Combine confectioners sugar,
shortening, water, non-dairy creamer, vanilla and salt
in large bowl. Beat at medium speed with electric
mixer for 3 minutes. Beat at high speed for 5 min. Add
more confectioners sugar to thicken or more water to
thin as needed. Reserve 1 c frosting. Tint remaining
frosting w/ green food coloring. Cut cooled cake
diagonally and invert one piece so that the cake takes
on a tree shape with a wide base. Spread green
frosting over cake. Decorate tree with reserved white
frosting and peppermint candies. Make trunk from
pretzel rods. Roll out large gumdrop and cut with star
cookie cutter. Top tree with gumdrop star. Serves:

CHRISTMAS CAKE

1 c. vegetable oil
2 c. sugar
3 eggs
3 c. flour
1 tsp. soda
1 tsp. cinnamon
1/4 tsp. salt
2 c. whole fresh cranberries
2 c. peeled and chopped apples
1 c. chopped pecans
1 tsp. vanilla
Confectioners' sugar

Beat oil, sugar, and eggs in electric mixer until smooth. Mix dry ingredients together and add to oil mixture, stirring by hand - dough will be stiff. Add cranberries, apples, pecans, and vanilla, stirring well. Bake in greased and floured bundt pan in preheated 325 degree oven for 60 minutes, then in 350 degree oven for 15 to 20 minutes. Remove from oven and cool in pan for 15 minutes. Turn out and dust with confectioners' sugar.
This cake can be baked in small loaf pans for Christmas giving.

Chocolate Cream Ornament Cake

1 pkg. (2-layer size) chocolate cake mix
1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding & Pie Filling
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup powdered sugar
1-1/2 cups thawed COOL WHIP Whipped Topping
1 ice cream cone
1 piece red string licorice (2 inch)
Decorating gel
Colored sugar

PREHEAT oven to 350°F. Lightly grease two 9-inch round cake pans. Prepare cake batter as directed on package. Blend in dry pudding mix. Pour evenly into prepared pans.
BAKE as directed on package. Cool 10 min.; remove from pans to wire racks. Cool completely. Meanwhile, beat cream cheese and powdered sugar in small bowl with electric mixer on medium speed until well blended. Add whipped topping; stir until well blended.
PLACE one of the cake layers on serving plate; spread with one-third of the cream cheese mixture. Cover with remaining cake layer. Spread top and side of cake with remaining cream cheese mixture. Poke two small holes in bottom of ice cream cone; insert ends of licorice into holes leaving small loop at top. Place cone next to cake to resemble ornament hanger. Decorate top of cake with decorating gel and colored sugar as desired. Store in refrigerator.

I have these two cakes for you:

Christmas Tree Cake

1 box Betty Crocker® SuperMoist® cake mix (any flavor)
Water, vegetable oil and eggs called for on cake mix box
2 containers Betty Crocker® Whipped fluffy white frosting
Green colored sugar
3 candy canes, broken to remove curved ends
Assorted small gumdrops, if desired

1. Heat oven to 350°F (325°F for dark or nonstick pan). Make and cool cake as directed on box for 13x9-inch pan.
2. Freeze cake uncovered 1 hour for easier frosting. From the middle of one short side, make a diagonal cut to each corner on opposite side, making 3 triangular pieces. Make tree shape by arranging 2 outer pieces with straight 13-inch sides together on foil-covered tray, cutting board or cardboard; frost top. Place remaining center piece on top.
3. Frost sides and top of cake. Press candy cane pieces in end of tree to make trunk. Sprinkle with colored sugar to look like boughs. Arrange gumdrops on cake to look like lights or ornaments. Store loosely covered at room temperature.

Cake
1 box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1/2 teaspoon red food color
1/2 teaspoon peppermint extract
White Icing
1 cup powdered sugar
1 tablespoon milk or water
1/2 teaspoon vanilla, if desired
Decoration
Crushed candy canes or crushed hard peppermint candies, if desired

1. Heat oven to 325°F. Generously grease and flour 12-cup fluted tube cake pan. Make cake batter as directed on box. Pour about 2 cups batter into pan. Into small bowl, pour about 3/4 cup batter; stir in food color and peppermint extract. Carefully pour pink batter over white batter in pan. Carefully pour remaining white batter over pink batter.
2. Bake as directed on box or until toothpick inserted in center comes out clean. Cool 10 minutes. Turn pan upside down onto cooling rack or heatproof serving plate; remove pan. Cool cake completely, about 1 hour.
3. In small bowl, mix icing ingredients. If necessary, stir in additional milk, 1 teaspoon at a time, until smooth and spreadable. Spread icing over cake. Sprinkle top with crushed candy. Store loosely covered.
