I'm on a 1200 calorie Diet and for Dinner Thursday Night, I'm going to make Stuffed Chicken Breast and something else with it. The calories for the Chicken Breast itself is 140. That still leaves me with 260 calories. Does anyone know some good side dishes in that calories range. Maybe just one that is 260 or two or three that equal up to 260?

If you like cherry tomatoes, may I suggest cutting them in half, drizzle a little olive oil on them and a dash of salt, and about 2 tablespoons of balsamic vinegar. Mix and let sit to room temp.
You could add a couple fresh basil leaves cut up that really gives it some flavor. Enjoy

Vegetable Medly Crumble

1/4 cup asparagus
1/4 cup broccoli
1/4 cup carrots
1/4 cup cauliflower
1/4 garlic clove
1/4 onion, sliced
3/4 teaspoon butter
2 tablespoons grated cheese
1/4 cup zucchini
1/4 cup mushrooms
3/4 teaspoon olive oil
1/4 cup raw oats
3/4 teaspoon sunflower seeds, toasted
1/4 slice whole-wheat bread, made into crumbs
3 3/4 ounces canned tomatoes
1/4 teaspoon basil



1. Heat oil, add onion and garlic, cover and cook over a gentle heat for 3-4 minutes.
2. Add vegetables and tomatoes.Bring to the boil, simmer 3-4 minutes.
3. Pour into ovenproof casserole dish.
4. Combine all ingredients for crumble topping and sprinkle over vegetables. Bake at 180 C for 20 minutes when topping will be crisp and golden.

Wine baked potato

INGREDIENTS
1 medium baking potato
1/2 medium onion, sliced
1/4 teaspoon butter
1/4 cup cooking sherry
DIRECTIONS
Preheat the oven to 450 degrees F (230 degrees C).
Make several cuts crosswise across the potato, about 1/2 inch apart and not quite all the way through. Place half of an onion slice, and a piece of butter into each cut. Place the potato onto a sheet of aluminum foil, and form a bowl. Pour the cooking wine over the potato, and fold the foil around to seal, turning the ends up like a boat to keep the wine from spilling out.
Place the potato onto a baking sheet, and bake for 50 to 60 minutes, depending on the size of the potato. When done, cut through foil, and top with your favorite potato toppings or just salt and pepper.

You may have one cup of steamed carrots with grated Parmesan PLUS one cup of unsweetened applesauce PLUS one cup of skim milk for a total of 260 calories. Carrots taste really good with a bit of Parmesan on them -- who needs butter?!

get this only 50 calories
1/3 cup KRAFT House Italian Dressing
1 large onion, chopped
1 small unpeeled eggplant, cubed
1 medium zucchini, cubed
1 large red pepper, chopped
1 pkg. (6 oz.) sliced mushrooms
1 can (14-1/2 oz.) Italian-style stewed tomatoes, drained, cut up
1/3 cup KRAFT Shredded Parmesan Cheese


HEAT dressing in large skillet on medium heat. Add onion; cook 5 min. or until tender. Add eggplant; cook and stir 5 min. Add zucchini, pepper and mushrooms; cook and stir 5 min.
ADD tomatoes, bring to boil. Reduce heat to low; cover. Simmer 15 min. or until vegetables are tender, stirring occasionally. Pour mixture into casserole dish; sprinkle with cheese. Cover and refrigerate until ready to serve.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/4 cup KRAFT Peppercorn Ranch Dressing
1 Tbsp. GREY POUPON Dijon Mustard
3 cups cauliflower florets (about 1/2 lb.), steamed, drained
6 cups broccoli florets (about 1 lb.), steamed, drained
1/2 cup crushed RITZ Crackers

PLACE cream cheese, dressing and mustard in medium microwaveable bowl. Microwave on HIGH 30 to 45 sec. or until cream cheese is softened and mixture is hot. Stir until well blended.
TOSS hot cooked cauliflower and broccoli with hot cream cheese mixture.
SPOON into serving bowl; sprinkle with crushed crackers.

2 medium tomatoes
1/3 cup PHILADELPHIA Fat Free Cream Cheese
2 green onions, sliced
Paprika (optional)

CUT tomatoes crosswise in half. Scoop out pulp and discard.
MIX cream cheese and onions until well blended. Spoon evenly into tomato halves. Sprinkle with paprika.

Mashed potatoes. You can buy imitation butter flavored extract. It adds no calories to the potatoes. One medium potato has around 100 calories and are loaded with nutrition.

Learn to binge and purge . . . it's the only way --really! And then, try to eat like a normal person. And rather then sit on the computer, go outside and walk around the block a few times and burn off the excess.
