Italian pork chops...

INGREDIENTS
3 eggs, lightly beaten
3 tablespoons milk
1 1/2 cups Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
2 tablespoons olive oil
4 cloves garlic, peeled and chopped
4 pork chops
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.
Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F (70 degrees C).

I suggest serving them with garlic mashed potatoes and garlic parmesan green beans...they are absolutely delicious.

Spaghetti with meat sauce

1 can of hunts spaghetti sauce
2 stalks of celery chopped
1 onion half chopped fine
1 can of mushrooms
1 green pepper chopped
1 garlic clove chopped fine
1 package of ground beef or italian sausage
seasonings seasoned salt, pepper to taste
once sauce is heated at a very warm temp throw in italian sausage raw (sausage will cook in with the sauce)
put all contents in a medium saucepan heat on low to simmer for 2 to 4 hours
In large pot boil water add spaghetti noodles cook until noodles are tender and soft
garlic bread
get a loaf of french bread
cut it up into 3/4 inch slices
spread garlic spread bake at 350 until bread is toasted and spread is melted

man... i made a great dinner tonight.
1/2 lb rigatoni cooked al dente
28 oz tin italian stewed tomatoes
1 medium onion - chopped
1 garlic clove - chopped
1 tsp crushed red pepper
1 cup veggie broth
some basil leaves chopped
1 1/2 tbsp olive oil
1 cup grated havarti cheese
1/2 cup grated parmesan
handful olives with pimentos

preheat over to 350 .fry the onion and garlic on med. in the olive oil until onions are translucent. add the tomatoes and the red pepper flakes, bring to boil then add the broth. lower heat, add basil. simmer until sauce is thick (about 20 - 25 minutes) add havarti, stir, add pasta, pour into casserole dish, sprinkle parmesan and olives on top, bake for 15 minutes. Delish!

but some baby clams in olive oil and some of youre fav italian tomato sause use any pasta you want cover it with the clams and sause and serve . cook the baby clams before you cover them find a good garlic bread and white wine . i lived in sardinia italy for 6 years while i was in the navy this was my fav and its simple just like most italian foods . you can also take youre bread and fry it . mix up some feta cheese into a paste after you fry the bread top the slices with the cheese bake it till the cheese is melted but not brown . makes a great side with salad

I love Broiled Parmesan Tilapia...I got the recipe from allrecipes.com. It only took about 15 minutes total to make and tasted excellent. They have thousands of recipes to choose from also.

Rigatoni Pepperanata
Ingredients:
• 1 LB Rigatoni, cooked & drained
• 1/2 LB loose hot Italian sausage
• 1 24 oz jar Red sweet roasted peppers
• 1 14.5 oz chicken broth
• 1 28 oz. can diced tomato
• 1/2 LB wet mozzarella, drained
• 6 tbsp parmesan cheese
• 2 tsp olive oil
• 1 tsp butter
• 1 small onion (diced)
• 1 pinch sugar
• 1 clove garlic (diced)
• 1 basil leaf (finely chopped)
• 1/2 tsp garlic salt

Method:
In saucepan with oil and butter saute garlic and onion on low heat. Do not let garlic brown. Add can diced tomato; keep on low heat; add garlic salt, chopped basil, sugar, 1 tbsp parmesan cheese and can of chicken broth. Cook on low heat for 1/2 hour. In fry pan cook sausage on low heat, making sure it is broken up well and cooked through. Do not drain. (Save grease.) Add cooked sausage and its grease to sauce. Make sure to drain sweet roasted peppers; cut into bite size pieces. Cut wet mozzarella into thin slices. Put 4 ladles full of sauce mixture in bottom of 9 by 13 inch pan. Put cooked pasta on top. Add remaining sauce. Sprinkle 5 tbsp parmesan cheese on top. Lay sweet peppers on top. Lay wet mozzarella on top of peppers. Cover with tin foil; cook in preheated 350 degree oven for 30 min.
Notes:
Do not throw away sausage grease; use it in sauce. Can also roast 4 red whole bell peppers on grill and peel away the skins, instead of using them from a jar.
