It's getting to where I can't or won't eat my vegetables. I won't eat most begged veggies over the E. Coli scare, as for lettuce, I am having allergic reactions when I've eaten it in the last month, reactions are basically my throat closing in and/ or a headache so bad. And I'm naturally alergic to greenbeans and asparrigus. Do you think there may be a cause or answer to the problem?

You may be extremely sensitive to the pesticides used on the vegetables. Try washing them very very well, then boiling them once, strain off the water, then boil again. Also, you can try organic.

Whilst you may be allergic to some vegetables, it sounds as though part of your problem may be psychosomatic. One way to overcome this as has been suggested by someone else is to go organic.. wouldn't worry too much about the e coli levels - if you knew half of what was actually in everything you consumed you would starve to death

If an allergist hasn't done specific tests for specific food allergies, I'd suggest a possible psychological cause for this.

It sounds to me more like you have let your panic over the possibility of disease from "unclean" veggies spread until you are having a panic reaction to all veggies.

My ex has the same thing about mushrooms. Thinks they make her sick to her stomach. If I sneaked them into a dish and she didn't see them they didn't bother her. If she saw the container or saw a mushroom on her plate, she became ill.

Get an allergy skin test done by a qualified allergist. Then decide what to do.

You could be having an allergic reaction to them. To find out exactly what veggies you are allergic to, or if you're allergic to the pesticides used on them, contact an allergist. They can run test to find out what is causing your allergic reactions.

Go organic. I doubt you're allergic to the actual vegetable as it is probably the pesticides you're reacting to.
Organic avoids the persticides, so you may be able to eat your veggies AND enjoy them like the rest of us.
I had brown rice with tofu, tomatoes, green beans, onions, garlic, carrots, brussels & squash for supper. (I'm vegetarian).
Homemade pumpkin pie for dessert.
