Yom Kippur = Day of Atonement. The short version is that in Old Testament times, a priest would symbolically take 2 goats, and put the sins of the people "upon" them and turn one loose in the wilderness. The other would be sacrificed uopon the altar. If you visit the web site I list you will see other relevant information, but you will have to read the law (first 5 books of Old Testament) to see the rest.

as said, Yom Kippur is the most important,

unlike some non-christians would initially think, (assuming equivalence to christmas) Hannukah is one of the LEAST important holidays.

Rosh Hashana would be second.

the typical answer will be Yom Kippur due to its significance and practice.

personally though I think Shavuot is the most important for theological reasons.
