Apple Crisp with Streusel Topping Recipe





3 pounds streusel topping, recipe follows
48 Granny Smith apples (113-count size)
12 ounces unsalted butter
2 quarts (64 ounces) granulated sugar
3/4 teaspoon ground nutmeg
3 teaspoons ground cinnamon
3/4 teaspoons ground ginger
1 1/2 cups all-purpose flour
3 teaspoons pure vanilla extract
1 1/2 cups seedless raisins

Make the streusel topping and chill, core and slice the apples. In large pot, melt the butter and stir in the sugar and spices. Add all fruit and cook until soft. Stir in flour and vanilla, then cook until thick and pour into 4 (8 by 10-inch) baking dishes. Top with streusel and bake at 350 degrees F until crispy and fruit is bubbling (approx. 40 minutes). Serve warm.

Streusel Topping:
1 1/4 pounds granulated sugar
1 pound all-purpose flour
1 teaspoon salt
1 1/2 tablespoons ground cinnamon
12 ounces unsalted butter
1/2-ounce pecan pieces

Mix butter, sugar, and flour together, until crumbly and mealy looking. Add cinnamon, salt, and pecan pieces. Do not over mix. Store in refrigerator. Streusel topping may be doubled for a thicker coating.

APPLE CRISP

Apple crisp is made with sliced fresh apples and cinnamon then topped with a crumbly mixture of flour, butter, and sugar.
INGREDIENTS:
4 cups apple slices
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup water
1 cup granulated sugar
1 stick (4 ounces) butter
3/4 cup all-purpose flour
PREPARATION:
Place sliced apples in a buttered 10-inch deep-dish pie dish, alternating with sprinklings of the cinnamon and salt. Pour water over apple slices.
In a mixing bowl, combine sugar, butter, and flour together with fingertips or pastry blender until crumbly.
Sprinkle over the apples. Bake at 350° until apples are tender and top is browned, about 35 to 45 minutes. Serve with whipped cream or ice cream.
Apple crisp serves 6.

13 x 9 pan filled with apple slices
Mix together 2 cups flour, 1 cup sugar, 1 tsp salt, 1 tsp baking powder, 2 cups rolled oats, and 1 tsp cinnamon. Pour 3/4 melted margarine into flour mixture and mix until crumbly. Pour 1/2 cup of water on apples. Add flour crumbly mix to top of apples in pan and mix a little. Bake at 350 degrees until it turns brown, about 35-45 minutes. (you might also try microwaving the apple slices a little before putting them in the pan to speed up the process!)

Apple Crisp

Apple crisp belongs to a long line of simple baked desserts that combine fresh fruit with a topping of dough. Cobblers, crumbles, grunts, brown Bettys, pandowdies, and crisps may be called old-fashioned and homey but having a dessert of warm baked fruit topped with a tasty crust is hard to resist. Now, unlike a cobbler that uses a biscuit dough topping, 'crisps' use a streusel-like mixture of flour, sugar, and butter, oftentimes with oats or nuts. The name 'Crisp' or 'Crumble' comes from the fact that when you pull this dessert from the oven you will notice how wonderfully crisp and crumbly the topping has become. Apple Crisps are especially popular during the fall and winter months which just happens to coincide with the apple's harvest time. If you can, use locally grown apples as their flavor and texture are superior to those found in grocery stores. Combining two or more varieties makes for a flavorful crisp as does adding some fresh raspberries or even blackberries, that favorite British combination. But don't worry if you can't get local apples, varieties like Granny Smith, Golden Delicious, Braeburns, and McIntosh, to name a few, are also excellent. Apple crisps are delicious warm from the oven with a dollop of softly whipped cream or vanilla ice cream.

This apple crisp's topping contains old fashioned rolled oats. Oats are a cereal grain that is rich and flavorful and comes in many forms. Very popular in Northern Europe, Scotland and Ireland. Oats to be consumed by humans are cleaned, toasted, hulled to become what we call oat groats. The oat groats are then steamed and flattened to become rolled oats or old-fashioned oats. Old-fashioned rolled oats are not to be confused with quick-cooking rolled oats. These are oats have been cut into pieces before being steamed and rolled into thinner flakes. They cook quickly, about 5 minutes, but their flavor and texture are a little different than old-fashioned rolled oats. I do not recommend using the quick-cooking rolled oats in this recipe.

Apple Crisp
Makes 4 servings

Topping:
1/2 cup (70 grams) all purpose flour
1/4 cup (50 grams) granulated white sugar
1/4 cup (55 grams) light brown sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon fresh or ground nutmeg
1/8 teaspoon salt
6 tablespoons (84 grams) unsalted butter, cut into pieces
1/3 cup (30 grams) old-fashioned rolled oats
1/4 cup (30 grams) chopped walnuts or pecans

Filling:
2 1/2 pounds (1.2 kg) or 6 cups peeled and sliced Granny Smith Apples or other firm, tart-tasting apple
1 cup fresh blackberries or raspberries (optional)
Zest of 1 lemon (optional)
1/4 cup (55 grams) light brown sugar

Preheat oven to 375 degrees F (190 degrees C) and place rack in the center of the oven. Butter or spray with a cooking spray, a 9 inch (23 cm) deep dish pie plate or an 8 x 8 x 2 inch (20 x 20 x 5 cm) baking dish. Set aside.

For Topping: Place all the topping ingredients (flour, sugars, spices, butter, oats and nuts) in a food processor and process until the mixture is crumbly (looks like coarse meal) and there are no large pieces of butter visible. (This can also be done with two knives or your fingertips.) Set aside while you prepare the filling.

For Filling: Peel, core, and slice the apples into 1/4 inch (.7 cm) thick pieces. Place in a large bowl, along with the berries and lemon zest (if using), and add the brown sugar. Gently combine and then transfer to your prepared baking dish Spread the topping evenly over the apples.

Bake for approximately 35-45 minutes or until the topping is golden brown. Remove from oven and place on a wire rack to cool for about 30 minutes before serving.

Serve with softly whipped cream or vanilla ice cream. Refrigerate leftovers and reheat before serving.

Easy Apple Crisp

INGREDIENTS
6 apple - peeled, cored and sliced
1 cup water
1 (18.25 ounce) package white cake mix
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Arrange apples in an even layer in bottom of baking dish. Pour water over apples.
In a medium bowl mix together cake mix, brown sugar, and cinnamon. Stir in melted butter or margarine until ingredients are thoroughly blended; mixture will be crumbly. Sprinkle mixture over apples.
Bake in preheated oven for 50 to 55 minutes.

Apple Crisp II

INGREDIENTS
10 cups thinly sliced apples
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/2 cup water

1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degree C).
Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
Bake at 350 degrees F (175 degrees C) for about 45 minutes.


TWICE BAKED CARAMEL APPLE CRISP

7 to 8 tart green apples (peeled, cored, sliced into 1/4" strips)
1 cup sugar
1 1/3 cup packed brown sugar
1 cup all-purpose flour
1 cup quick cooking oats
2/3 cup melted unsalted butter
1 1/2 tablespoon ground cinnamon
1 tablespoon ground nutmeg
1 teaspoon ground ginger
10 oz caramel sauce (preferably from starbucks)
vanilla ice cream

Preheat oven to 375 degrees F.
Spray one 9 x 13 x 2 and one 8 x 8 x 2 pan with non-stick cooking spray.

Arrange half apples in 9 x 13 and other half in 8 x 8. Sprinkle each with 1/2 cup sugar.

Mix together brown sugar, flour, oats, cinnamon, nutmeg, ginger and butter. Stir until well moistened. Sprinkle half this mixture over 9 x 13 apples. Top oat mixture with 1/4 to 1/2 cup caramel.

Bake both pans for 15 to 20 minutes.

Remove from oven.

Arrange apples in 8 x 8 over apples in 9 x 13 (this makes a second layer). Top with remaining oats and another 1/4 to 1/2 cup of caramel. Bake an additional 15 to 20 minutes or till apples are tender and top is crisp. Remove, let sit till warm. Serve with vanilla ice cream and additional caramel sauce on top.


EASY APPLE CRISP

1 c. sugar
2 tsp. lemon juice
1/4 c. water
1/2 tsp. cinnamon
6 peeled and sliced large apples
3/4 c. flour
1/4 tsp. salt
6 t. butter

Combine 1/2 c. sugar, lemon juice, water and cinnamon in bottom of small baking pan. Slice in apples. Blend remaining 1/2 c. sugar, flour, salt and butter until crumbly. Spread over apples and pat smooth. Bake at 375 degrees for 40-50 minutes, until apples are tender and crust is browned. Serve hot with ice cream. This is a good recipe for apple crisp if you don't like the over-sugary oatmeal taste. It's basically a rectangular apple pie, but healthier (no lard).

EASIEST EVER APPLE (CHERRY) CRISP

1 box yellow cake mix
1 stick butter
1 can apple pie (or cherry) filling

Spoon apple or cherry pie filling in 8x10 cake pan. Sprinkle dry cake mix over top. Cover completely.
Melt butter in saucepan or microwave. Spoon over entire top of cake mix. Spread with butter knife gently.

Bake in a 350 degree oven untill browned, about 20 to 25 minutes.

Let completely cool.

Can be served with cool whip or vanilla ice cream on top.

APPLE CRISP

4-6 apples
1/4 cup butter
1/2 cup brown sugar
3/4 cup flour

Pare, core and slice apples into a baking dish. Sprinkle with lemon juice cream butter and sugar combine to make crumbly mixture ( mix with hands like a pie crust). Spread over apples and bake.
Bake at 350°F until apples are soft and top is brown.
