I have an IBANEZ acoustic guitar and inside has an hexagonal for an allen and I was wondering what happened if I turn it because I heard that you have to adjust it in case you switch strings gauge

Its a truss rod, and don't mess with it, i made the mistake of experimenting with one on a guitar i used to have, i messed up that guitar so bad i had to take it to the repair shop and get lectured about not touching the truss rod, so trust me, don't do it!!!

That is the truss rod. There is a rod embedded in the neck that allows an experienced repairperson to take the bow out of a neck.
Do NOT try this at home! The risk is that you may overtighten the rod and either break it (on an Ibanez, this means throwing the guitar away) or pop the fingerboard off the guitar.
Should you choose to go to LIGHTER strings I would go ahead and do it without adjustment unless you start to get fret buzzing. If you go to HEAVIER strings then the truss rod will likely need adjustment.
If you do choose heavier strings you will likely also need other work done like enlarging the slots in the string nut so that means a visit to your local shop anyway.
