EVOO=extra virgin olive oil, it is called extra virgin because it is the very first oil that comes off of a press. When they do a second pressing it is virgin, and after that it is just olive oil.

Easy! Extra virgin olive oil is the oil from the first stage of pressing which is considered to be the best and purest but has a low cooking temperature that is not suitable for high heat cooking. Whereas, the normal olive oil has been processed through a few stages making it tolerant to high heat cooking.

extra virgin olive oil and E.V.O.O are one and the same. This is olive oil produced from the first pressing of the olives and contains only 1 percent acid. It's cosidered the finest and fruitiest of the olive oils and is the most expensive.

evoo is the first squeeze from the olives so it has a strong fruity flavor where as olive oil is from the 2nd or 3rd squeeze and the reason it is used so much is it has a light flavor and cooks at a really high temperature oh and its spelled contessa

They had worker shortages and had to employ Extra Virgins to jump up and down on the olives. LOL

virgin oil is different from ordinary oil, the process in making virgin oil is very natural ways... it doesn't used any chemical things unlike ordinary oil.
