I agree with you. If we don't know why God said not to eat them, how do we know He actually changed His mind? Be very careful though -- Christians don't like logic!

Christians believe that when Christ came in the meridian of time He fulfilled the Mosaic laws, such as animal sacrifice, circumcision, and the other rigid laws that were needed for the Israelites. That does not mean the Ten Commandments are done away because they are commandments that are still applicable today.
An apostle or a prophet, having received a vision of the Lord, learned that all of God's creations are suitable for man. Unfortunately, I can't back that up with the name and biblical verse. I'm sure a Bible scholar on this forum can enlighten us both.
Genesis 9:3 predates that particular vision I have in mind because the verse relates to Noah and his sons.

The reason God prohibited eating certain kinds of animals was for health reasons. This issue is not salvific. In other words, your salvation is not at stake (forgive the pun) if you eat meat. Your body is a temple of the Holy Spirit. You should treat it as such. Thus, alcohol, tabacco, drugs etc should not be introduced. Pork and other unclean meats are not healthy. They carry disease and increased risk of cancer. With all the news about mad cow disease etc. maybe vegetarianism is best. I have been a vegetarian for more than 35 years. Of course even vegetarians need moderation in diet. Too much food is too much food regardless of content.
Some will point to Peter's dream in Acts and declare that all foods are good to eat. Not true. The vision of Peter was a allegory to show that the gospel did not belong only to the Jews (clean meat) but also to the gentiles (unclean meat). It was not a treatise on clean and unclean meat.

The things that God told the Jews not to eat, he never said that to us. Jesus said to Peter. in Acts 10:15 to kill and eat the animals he showed him in a vision. Peter said no Lord they are unclean. Jesus said "What I have cleansed not to call it unclean".We are not under the Levitical laws anymore, Praise GOd. There were so many nobody could obey them all. Jeus took care of them all gettin them out of the way it says in the BIble. Nailing the rules to the cross when He died. He just wants our love and a relationship with Him. Then He can tell us what He wants. So dont stress over things like that. Relax. God is Love.

Men wrote the Bible not God- it is one of the best spiritual guides we have but don't think of it as a lightening bolt from above. Many rules like that one could have been added because pork can be very unhealthful if not completely cooked- try explaining that back then- isn't it easier just to tell people God said don't do it?

There is no food that God tells Christians not to eat. There were foods that the Mosaic Law prevented Jewish people from eating, and that remains true today. But Jesus taught that "it is not what goes into a man that makes him unclean, but what comes out of him".

Act 15:28-29

Sustaining from pork was a law for the Jews before the death of Jesus.
The Old Testament was written to the Jews. The law was nailed to the Cross.

What is inscripted in Bible provides a form of guidance to us. What is forbidden or perfectly acceptably relatively depends on the individuals preference. For instance, what is perfectly safe for consumption can cause intolerance to the others. Therefore, if you consciously believe that by consuming those food that you feel will are forbidden, then my advise don't not consume them. Basically what I am telling you, consume food that you FEEL should be consumed.
