If you want them peeled and cut into pieces. Boil them first, just until they are fork tender. Drain well, put into a casserole pan, add a few pats of butter, some brown sugar (just dot it around) . Bake in a 350 degree oven after about 20 minutes take it out and cover with mini marshmallows, return to the oven and continue baking until the marshmallows brown

I boil mine first with the peeling until you can get a fork threw them. Then I drain the water, let cool then peel, cut into pieces, add brown sugar, diced pineapple, butter and cover on top with mini-marshmallows. Bake at about 200 or 250 degrees (ovens vary). Bake until the marsh-mallows are just slightly roasted and soft. My family likes this recipe for holidays.

SOUTHERN YAM PINEAPPLE CASSEROLE

1 (No. 303) can whole sweet potatoes
2 tbsp. brown sugar
1/4 tsp. salt
1/2 tsp. cinnamon
1 egg, beaten
3 tbsp. melted butter
1 c. crushed pineapple

Beat all together. Butter baking dish, place 1/2 of mixture in dish, dot with marshmallows, then add remaining mixture. Bake at 350 degrees for 30 minutes. Remove from oven, dot top with marshmallows, and replace in oven about 10 minutes, or until brown.
