We just had some sauteed in olive oil with some garlic salt and pepper. You could add any veggies you wish also.

1. Go to the grocery store.

2. Cut deep cuts in the chicken.

3. Inside the cuts and all over, add you favorite condiment.

4. Add some marinate sauce and let it sit for an hour or 2 for best taste.

5. Then, put it in the oven and cook it at around 400 degrees for about 1 to 3 hours or until the chicken is golden brownish.

My favorite way is to remove the skin if it isn't a skinless breast, marinate in Good Seasons Italian dressing mix except make the dressing with only a few tablespoons of oil and more vinegar and water. Let the meat marinate for at least 20 minutes (2 hours is best). Then, cook it on an outdoor grill, a George Foreman-type grill, or spray or wipe a pan with olive oil and pan fry. This gives you healthy fats with the protein. I don't use Salt, but I like a lot of garlic and Mrs. Dash. There are a lot of flavors in the Mrs. Dash stuff. Happy eating!

Grilled Parsley Chicken Breasts

4 ea. Boneless fresh chicken breasts (with first wing bone on if available), about 6 oz. each
1/2 bunch Italian parsley leaves
1 Tbl. Olive oil


Divide the parsley leaves between the four chicken breasts and slide them between the skin and meat of each breast. Place a suitable saute pan over medium high heat and add the olive oil. Season the chicken liberally with salt and pepper and place them, skin side down, in to the pan. Cook the chicken until the skin becomes brown and crispy, about six minutes, then turn over and continue to cook another five minutes.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

Remove the skin.

Sautee in olive oil and garlic for 5 minutes on each side.

Bake at 350 until done.

Serve with a colorful salad.

I have simple method to cook chicken breast: frist, braise chicken breast until it are boiled, then, put seasoning in chicken breast. It's ok!

Boil it with fresh lemon, onions,celery, chicken bullion. When done sprinkle with fresh finely chopped parsley. Enjoy with a garden salad!
