Frozen meat should be defrosted in the refrigerator not on a counter top.

Place the meat in your refrigerator on a platter or in a bowl to catch any juices that may leak from the package.

For a large cut of meat allow 4-7 hours per pound, for a small cut of meat allow 3-5 hours per pound, for Steaks allow 12 – 14 hours.

You can also defrost meat during cooking time; just increase your cooking time to 1 ½ of the original cooking time to the recipe time.

You will want to monitor the cooking process closely to make sure that it is cooking according to your schedule.

It all depends on the meat: raw meat has a MAXIMUM shelf life of 2 days, INCLUDING the time before you froze it (i.e. if you freeze the chicken after its been in the fridge for a day, you only have 1 day to use it after its defrosted. If you freeze it straight away, you can use it two days after is defrosted). Cooked and cured meat has a shelf life of 3 days in the fridge after defrosting. Raw meat should always be stored on the bottom shelf of the fridge, to prevent any blood/juices from dripping on already prepared foods. Defrost meat overnight in the fridge rather than on the worktop / in the microwave. Always defrost meat thoroughly before cooking, never cook frozen meat. Never refreeze meat thats already been defrosted.

Raw chicken should not be used if it has been in your fridge more than 24 hours. Cooked chicken (regardless of how it is prepared) shouldn't be eaten after 48 hours in the fridge. And in case you're wondering this too, any cooked food should be thrown away if it has been out of the oven and not refrigerated for more than 4 hours. This is a pretty standard rule of thumb that most fast-food restaurants, schools, nursing homes, and similar institutions use.

Use it on the second day, max. Especially if you used a microwave to defrost it. Frozen whole chicken or whole turkey can be thawed for longer in the fridge since there's a lot to defrost. And God knows you don't want to try to cook a partially thawed bird.

I cook it up as soon as it thaws and then keep it up to 4 sometimes 5 days in the refridgerator. Most of the time it gets finshed off by day 5. After 5 days I pitch it.

It depends on how old it was when you froze it. If it had one day left to expiration when you froze it, then you have one day left after it thaws. I always write the date that i freeze it on the package.
