Both are acceptable. I would use the first and I am a grammar snob.

Personally, I'd opt for the hyphen myself, since you're basically turning the two words into one adjective. However, since you don't know, fudge a little! Phrase your sentence a different way. "I enjoy any classes that are related to science." or maybe "I enjoy classes on any subject that deal with science." or even "Any class even remotely related to science interests me." Have fun and get creative -- within the bounds of the assignment, of course, so you'll get credit for it.

P.S.: I'd hyphenate grammar-challenged, too, for the same reason.

I don't think you are truly grammar challenged. If you were you would have forgotten the comma. The answer is a. science related. Or you could simply have said I enjoy science classes.

I would suggest that you try to write about something a little bit less direct than "My Mom" or your brother... Try to change something like the hard time you went through into a giant metaphor. For example, it'd be SO easy to make your hardships into the winter winds: sometimes sneaking up and catching you without your hat and others blowing you to the point where you're falling from the force. These poems are a bit too simplistic and elementary for my taste. But, I think, with some practice, that you could have some really good potential :)

Science-related is correct. When you connect the two words with a hyphen, it assumes an adjectival function, because what you want it to do is describe the word, "classes."

Without the hyphen the words are simply a noun and a verb.

While both A and B are correct, A is "more correct".
The hyphen in B will cause a visual interruption, and make people think it is an incorrect form, therein quesioning your ability to communicate
