So good, like nothing you've ever tasted, perfect paired with stuffed cabbage, the tastes & textures are amazing together!
Semolina Gratin:
1 quart milk
1/4 cup sweet butter
1 1/4 cups semolina
1/2 cup grated oka (semi-soft cheese similar to smoked gouda)
2 egg yolks
Salt and freshly ground black pepper
1/4 cup Parmesan
1/4 cup bread crumbs
Bring milk to scald and add the butter, whisking quickly. While whisking, add semolina in a steady stream. Keep whisking until mixture thickens. Turn down heat and cook over low heat for 10 to 15 minutes. Remove from heat and whisk in the oka and yolks. Adjust seasonings.
Transfer to a casserole and sprinkle the gratin with the Parmesan and breadcrumbs. Refrigerate until ready to use. Quarter for serving.
Reheat in a 375 degree F oven for 12 to 15 minutes, gratin under a broiler to finish.

Potato pancakes (with sour cream), blintzes, borscht, mashed potatoes (with the tomato-y gravy from the cabbage ladeled over 'em).

My Grandma would always make mashed taters, and we would but the sauce from the cabbage rolls (as we call it) on top! Yummy!

make pork fried egg rolls with it thats the best like the chinese restaruant or just order
