We have done a hungi with two new zealand friends who helped us but we are kken to do aanother as a xmas party help.

Dig a big ass hole in the ground

Light a fire next to it, a big one,

When it is going add some smooth rocks, bricks etc, any rock that wont explode when heated.

When fire has burnt down push rocks and hot coals in to the pit.

Wire baskets made from old builders rio and chook wire are handy now.

Fill baskets with meats e.g. whole sheep, pork legs, chooks etc and vegetables e.g. kumara, potatoe, carrots whatever.

Cover baskets with cauliflower leaves or cabbage leaves then wrap with an old wet sheet, followed by a good layer of wet hessian.

When baskets are wrapped and damp lower them into the pit and cover with removed soil from the hole

Walk away come back in 3 - 4 hours depending on exactly what you put in the hole.

Dig it up, Serve it up, and Eat it up

Try doing some research on the traditional New Zealand Maori method called a Hangi (pronouced Hungi) where the meat is cooked in a pit in the ground containing warmed stones. e.g. http://www.nzhistory.net.nz/Gallery/food/hangi.htm

Hawaiins also use a simlar method of cooking at a traditional Luau. Samoans also do something similar.
