I used to work 12 hour shifts 3 days a week. On one of my off days I would cook a weeks worth of meals. You could start something in the crock pot before you leave for work in the morning or have a chef salad for supper. Walking tacos is a nice and easy change of pace. If you prepare your meals ahead all you have to do is come home, warm them up and EAT! Good Luck!

Cook up some minute rice and set aside. If you have some beef or chicken strips, brown these in a little oil and add some stir-fry type vegetables to it and soy sauce. Serve over the rice. Serve ice cream and cookies for dessert.

try a pizza crust with mac and cheese on it with some ground fried hamberger. Or cheeseburger pizza with any toppings you like. My kids love pizza no matter what kind, we put anything and everything on a pizza crust. Makes it so much easier to cook and serve. and its quick. We've even set out small pizza crust and several toppings and let everyone make any kind they want. Just open the fridge and have at it.

Easy, kid-friendly and healthy ideas:

Meat:

- grilled boneless chicken breasts - you can dress these up as you like (just s & P, BBQ sacue, white gravy, cream of mushroom soup)

- ground turkey burgers (if you mix a little dry onion soup mix in with the turkery, it's pretty flavorful)

Fruit & Veggies:

- corn on the cob

- fruit salad (fresh or canned)

- baked apples w/cinnamon

Breads/Pasta:

- noodles (butter or alfredo)

- maple cornbread

Dessert:

- pudding pie (store bought graham cracker crust w/your fav flavor of pudding, garnished w/whipped cream, cherries)

- trifle (layers of sliced Sara Lee pound cake, your fav flavor of pudding, and whipped cream)
