High card- Ace high
Pair- Two Aces
Two pair- Two Aces and Two kings. Highest pair wins.
Three of a kind- Three aces
Straight- five cards in sequential order such as 10 J Q K A
Flush- five cards of the same suit and highest card in the flush wins if two or more players have flushes.
Full house- Three of a kind and a pair. Highest three of a kind wins.
4 of a kind- four cards such as 4 aces.
Straight flush- five cards in sequential order all of the same suit. Highest card in the straight flush wins.
Royal flush- 10 J Q K A suited.

Who ever has the best hand when all the betting is done wins, however, people do bluff others into not betting and and folding their hand. I saw a professional on tv get bluffed out of a hand when he had three aces and the other person only had an 8 and 5, however the man with three aces thought the other person might have had a flush (he did not) it was a great bluff.

OK, here are the winning hands in order, from worst to best:
High card: Like if you're holding an ace, and that is the highest card anyone has, and nobody even made a pair.)
Pair (two 4's, two kings, etc.)
Two Pair (a pair of 5's and a pair of jacks, a pair of 9's nd a pair of 10's, etc.)
Three of a Kind, or "Trips" or a "set" (3 8's, 3 queens, etc.)
Straight (5 cards in number order, any suit. e.g.- 4 of spades, 5 of spades, 6 of clubs, 7 of hearts, 8 of clubs. Higher straight wins if two people have straights.)
Flush (5 cards, any number, all the same suit. e.g.- 7, 8, 9, 10, J of clubs. Highest flush wins out between two flushes.)
Full House or "boat" (Three of a kind plus a pair, e.g.-3 jacks and 2 8's.)Highest full house wins, for instance if one person has aces full of jacks (3 aces, 2 jacks) and the other person has jacks full of aces (3 jacks, 2 aces) the person with the three aces wins.
4 of a kind or "quads" (4 cards with the same number- e.g. 4 of hearts, 4 of spades, 4 of diamonds, and 4 of clubs)
Straight flush- (5 cards in number order, same suit. e.g.- 3, 4, 5, 6, 7 of clubs. Higher straight flush wins, but that usually only is possible in stud games like Texas Hold'em, with community cards.)
Royal flush (Best hand of all!!! 10, jack, queen, king, and ace, all of the same suit!!!)

You should read the rules on http://www.theultimatepokerguide.com for whichever game you want to play. They have visual examples which will help you figure out how the best hand is made.
