I have the 9 layer dip...
2/3 cp. sour cream
1/8 tsp. cumin
1/8 tsp. cayenne pepper
1/8 tsp. paprika
Dash of salt
(1) 16 oz. can refried beans
1 cp. shredded cheddar cheese
1/2 cp. guacamole (made fresh or frozen, thawed)
1/4 cp. sliced black olives
2 green onions - 1/4 cp. (chopped)
1 medium tomato (chopped)
1 tsp. fresh cilantro (chopped)
On the side: salsa
1. combine the sour cream, cumin, cayenne peper, paprika & salt in a small bowl. Mix well & set aside..
2. Heat refried beans until hot, using a microwave or in a saucepan over medium heat on the stove
3. When the beans are hot, spread them over the center of a serving platter or in a shallow dish
4. Sprinkle 1/2 of the cheese evenly over the beans..
5. Spread the guacamole over the cheese
6. sprinkle sliced olives over guacamole
7. spread the seasoned sour cream over the olives
8. sprinkle the green onions, then tomatoes evenly over the sour cream
9. finish up by sprinkling the remainder of the cheese over the tomatoes & topping the dip off with the cilantro.
10. Serve dip with tortilla chips & a side of your favorite salsa....

Change to: servings US Metric
2 slices lean bacon
1 (16 ounce) can refried beans, plain
1/2 cup sour cream
1/2 teaspoon taco seasoning
3/4 cup shredded cheddar cheese
3/4 cup guacamole (Frozen or Prepared is Fine)
1/3 cup diced tomatoes (about 1 Romano Tomato)
1 tablespoon fresh cilantro, chopped finely
2 tablespoons sliced black olives
2 tablespoons finely sliced green onions
Fry diced bacon until done, add refried beans and cook slowly and stirrer frequently until the bacon and bacon drippings are mixed through about 15 minutes, remove from heat.
Mix taco seasoning with sour cream and set aside.
To built 9 layer dip place ingredients in this order.
Place refried beans on serving platter spread out to 1- 1 1/2 inches thick.
Then layer: 1/2 C shredded cheese, 1/2 C prepared sour cream, 3/4 C guacamole, diced tomatoes, diced cilantro, black olives, sliced green onion, and 1/4 C cheese for garnish Serve with crisp corn chips and a very cold beverage of choice.

BETTER THAN TGIF'S 7-LAYER MEXICAN DIP!
INGREDIENTS
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese
DIRECTIONS
In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

1 (4.5 ounce) can chopped green chiles, undrained
1 tablespoon fresh lime juice, plus
2 tablespoons fresh lime juice for avocado layer
2 teaspoons chili powder
1/4 teaspoon ground cumin
1 pinch Salt
3 avocados, halved, pitted, flesh spooned out
1 cup sour cream
1/2 cup mayonnaise
1 cup salsa (drain to equal 1 cup if salsa is especially runny)
3/4 cup sliced canned black olives, drained
1 cup grated pepper Jack cheese
1/2 cup thin sliced scallion greens, green part only
DIRECTIONS
Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a small bowl. In a second small bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a third small bowl, mix sour cream and mayonnaise.
Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of a 9-inch deep-dish pie plate or similar size pan. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.

Chile con queso: It is made by melting a package of Velveeta cheese with a can of Ro-Tel tomatoes-and-jalapenos. It is a total Tex-Mex thing, totally calorific and always a hit at parties. You have to use Velveeta to make chile con queso, a Tex-Mex dish that's vaguely descended from a real Mexican dish known as queso fundido. Queso fundido is made from a white mozzarella-like cheese but it's just not the same thing; what you want is to do the Velveeta thing.

2 avocados
1 small onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
salt and pepper to taste
DIRECTIONS
Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors
in a container, one layer of cheese, then one layer of black beans then one layer of guacamole and repeat until ingredients are gone. try to have cheese as top layer. pour sour cream over everything

Ingredients
1 cn fritos jalapena bean dip

3 avocados; mashed
1 ts lemon juice
1 garlic salt to taste

8 oz sour cream; mixed with
1/2 pk lawrys taco mix
5 green onions; chopped
2 md tomatoes; chopped
1 cn (small) sliced ripe olives
2 c shredded cheddar cheese
Instructions
I suggest shredding cheese first and putting in refrigerator until needed-
easier to work with. Refrigerate, covered with Saran wrap, for 24 hrs. for
flavors to blend.
