The grill works pretty much the same as in the summer, unless you have to deal with wind. Other adjustments to consider are to wear warmer clothes and be careful your beer doesn't freeze.

The key is the temp of your grill. I have found that if I keep the unit out of the wind, I do fine. I have cooked at 10 degrees and had good results. Grilling temp is about 400 degrees. For smoking about 150-175 seems to work for me.
