Chocolate Strawberry Cheesecake
1 9-inch baked pie shell
1 6 oz. package of chocolate chips
1 8 oz. package of cream cheese
1 quart fresh strawberries
3/4 cup of sugar
2 tablespoons of cornstarch
1/3 cup of water
Melt chocolate chips (use double boiler or microwave) then blend with cream cheese. Can soften with 1 tablespoon of milk, if desired. Spread in pie shell and cover with half the strawberries. Mix sugar and cornstarch then water, stir constantly over low heat. Add rest of strawberries. Pour over top of pie and chill. Top with whipped cream before serving

CHEESE CAKE
CRUST:
2 c. graham cracker crumbs
1/2 c. + 1 tbsp. melted butter

FILLING:
3 (8 oz.) bars cream cheese (at room temperature)
1 pt. sour cream
1 c. sugar
3 eggs (at room temperature)
1 tsp. vanilla

TOPPING:
Fresh strawberries or cherry pie filling
Use 10 inch spring form pan. Preheat oven to 375 degrees.
Combine crumbs and butter. Press into bottom and 2 inches up sides of pan.
Cream together cream cheese, sugar, sour cream and vanilla.
Mixture should be smooth. Add the eggs, one at a time. Beat until fluffy.
There should be no lumps.
Pour filling into crust. Bake at 375 degrees for 1/2 hour.
Leave cake in oven for one hour longer with oven turned off.
(Do not open oven door.) Remove cake from oven and let cool
before placing in refrigerator. When ready to serve, top with fresh
strawberries or pie filling. Remove from pan.

Strawberry Cheesecake

Ingredients

CRUST:
1 1/2 c Graham crakers
2 tb Sugar
3 tb Butter or margarine; melted

FILLING:
19 oz Cream cheese; softened
1 c Sugar
2 ts Lemon peel; grated
1/4 ts Vanilla
3 ea Eggs

GLAZE:
1 c Mashed strawberries
1 c Sugar
3 tb Cornstarch
1/3 c Water


Instructions

Pre-heat oven to 350f. CRUST: Stir together graham cracker crumbs and sugar. Mix in butter thoroughly and press into a 9" springform pan. Bake 10 minutes. Cool. Reduce oven temperature to 300f. FILLING: Beat cream cheese in a large mixing bowl. Gradually add sugar, beating until fluffy. Add lemon peel and vanilla. Beat in eggs one at a time. Pour into shell. Bake 1 hour or until center is firm. Cool to room temperature and then spread with the strawberry glaze. Chill 3 hours. GLAZE: Blend sugar and cornstarch together in a small saucepan. Stir in water and strawberries. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir for 1 minute. Cool thoroughly before spreading over cheesecake.

Ultimate Strawberry Cheesecake

1 3/4 cups graham cracker crumbs
1/2 cup butter, melted
2 tablespoons granulated sugar
2 cups cottage cheese
2 (8-ounce) packages cream cheese, softened
1 1/2 cups granulated sugar
2 large eggs
1/2 cup cornstarch
2 tablespoons lemon juice
1 teaspoon vanilla extract
1/2 cup butter or margarine, melted
2 cups sour cream
1/3 cup light corn syrup
1/4 cup water
1 tablespoon cornstarch
1/4 cup crushed strawberries
1 teaspoon lemon juice
1/8 teaspoon red food coloring, optional

1. Preheat oven to 325°F (160°C).
2. Combine graham cracker crumbs, butter and sugar; mix to blend. Spread in bottom of a 9-inch springform pan; set aside.
3. Press cottage cheese through a sieve into a large mixing bowl; add softened cream cheese. Beat on high setting with an electric mixer until well blended. Beat in sugar, then eggs. Reduce mixer speed to low; beat in cornstarch, lemon juice and vanilla.
4. Add butter and sour cream; beat until smooth. Pour into reserved springform pan. Bake for 1 hour 10 minutes or until firm around the edge. Turn oven off; leave cheesecake in closed oven for two additional hours. Remove from oven; refrigerate for at least 1 hour.
5. Meanwhile prepare glaze by mixing corn syrup, water and cornstarch in a small saucepan. Blend until smooth. Add strawberries; bring boil for 1 minute. Strain into a small mixing bowl. Stir in lemon juice and (optional) red food coloring. Cool slightly, then drizzle on top. Smooth with a knife.
6. Refrigerate until time to serve.

Makes 16 servings.
