After Thanksgiving, my mom usually uses the leftover mashed potatoes to make soup. She substitutes them for baked potatoes in her Baked Potato Soup. I don't know the exact recipe, but I would assume that any Baked Potato Soup recipe would work!

EDIT: I found this one that is actually a Mashed Potato Soup recipe! http://www.epicurious.com/recipes/recipe_views/views/13382

One of my favorite uses is for breakfast the next morning as potato pancakes. Take and beat a couple of eggs, stir into your mashed potatoes, chop up an onion and add, and add just enough milk to make it into a batter. cook like pancakes and serve with syrup - yummy!

If you mix in a little bit of mayonnaise, and/or cheese, and/or sour cream, throw them in an oven-safe dish, and broil them on the lower rack of the oven, the potatoes will be nicely flavoured, with a crispy brown top.

Fire in some herbs (chives and parsley are good) if you have them; garlic's also good if you like it.
