Best in a deep frier... if you want to do it at home you can take a sauce pan/fry pan and put a couple cups of cooking oil in there and heat it up (medium to low heat should do the trick) - then you just toss the fries in there once the oil is good and hot.

Hey, masterchef. "French" frying refers to a process of frying food twice. To do French fries:
Cut them into the size you want. Deep fry at 325 degrees for 4 or five minutes to cook them all the way through. Drain them and heat the oil up to 375 degrees. Fry them a second time at that higher temp for 2 minutes to make them crisp and golden.

Bring your oil up to 350 deg. Put the fries in and cook for about three minutes. Take out and bring the oil up to 375. Put the fries back in and brown.
The first introduction into the oil starts the cooking process by converting the internal moisture to steam. The outsides will seal due to the oil trapping the steam inside. Taking them out of the oil while you raise the temperature allows the steam to continue cooking the potatoe. Putting it back into the hotter oil will brown the outsides but open the pores. Steam will escape back into the oil but the cooking time is short so they won't absorb the oil. End result is great tasting fries with little oil absorbtion so the food police won't be knocking at your door.

Let the oil heat up on a medium fire. Take your cut potatoes and let them sit. Turn them over and wait till they are crispy and brown.
You can also boil it, but it's not as tasty.
