I'm aware there are trillions of websites on recipes but I'm looking for something that's good, that works, that others can recommend first-hand. It can be a potato, vegetable, dessert, salad, etc... just something that pickly people find hard to resist :).

Thanks!

Smushed Apples and Sweet Potatoes

INGREDIENTS
2 large sweet potatoes, peeled and diced
2 tablespoons butter
1/4 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 Granny Smith apple - peeled, cored and sliced
1/8 cup milk
DIRECTIONS
Place the sweet potato in a medium saucepan and fill with enough water to cover the potatoes. Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until tender. Remove from heat, drain and set aside.
Melt butter over low heat in a small saucepan. Mix in the sugar, cinnamon and allspice. Add the apple slices, cover, and let simmer for 5 minutes, or until the apples are tender. Mix the apple mixture into the drained sweet potatoes along with the milk. Mix well using an electric mixer or just a fork until potatoes are mashed

First I have to recommend a great cookbook....The victory garden cookbook. It has so many recipes for vegetables, and they are all good.

Picky is difficult to define....are they foodies and want a gourmet meal, or do they just like basic, basic food (nothing complicated)?

Potatoes florentine (mashed potatoes mixed with sour cream and chopped cooked spinach...baked with cheddar cheese on top)

Good old green bean casserole.

pearl onions with cranberries

Baked pears with cinnamon streusel (drain canned pears into a baking dish. top with streusel(3/4 c flour, 1/3 c sugar, 1/3 c butter) and bake 30 minutes 350 degrees. Boil drained syrup down to a thick syrup and drizzle over finished pears.

squash cake

Corn spoon bread

relish tray (fresh veggies/olives)

Pillsbury frozen butterflake rolls.

My family loves this recipe! I make it every year...

MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows

In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain.

Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon.

Starting with 1/4 cup orange juice, make mixture moist and fluffy.

Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top.

Bake at 350 degrees for 25-30 minutes. Don't let marshmallows get to browned.

Green Bean casarole is my favorite.....

1 can grean beans
1 can cream of muchroom soup
1/4 cup sour cream....
For topping there are several options.....you can use the frencies onion crisps, frozen onion rings, tator tots, corn flakes

Mix beans, soup and sour cream in a cassarole dish....top with you topping.( I prefer either the onion crisps or tator tots) but the are all good....and then bake in a 350 degree oven intell the topping you choose is a nice golden brown....usually about 20-30 min....the tator tots tend to take a little longer.
