In the wild, dogs camouflage their own scent, to make them harder for prey to detect. Our domestic dogs just carry over that action, and do it for fun..Something of the call of he wild..
Of course, human deer hunters do the same, with store bought scent..You can get it at any sporting goods..

Just about any breed of dog that you could possably imagine will do this.

I have no clue as to why, and probably never will, but for some reason dogs think that fowl smelling things like deer poop, rotten fish, rotten eggs, and dead frogs smell wonderful, and they want to wear them as parfume.

Your dog does it basically because he likes the smell, and the only way to keep him from doing this is to either clean up the deer fecies in your yard when you find it, or to keep him out of the area of your yard that the deer are in the most.

Dogs have an instinct to disguise their smell by rolling in very strong scents. Even if they don't hunt anymore this is still typical dog behavior.

Many things that stink to us smell awesome to our dogs (and visa versa). Dogs also have scent glands right in front of their ears and many times rub their faces against things to mark their territory.

Considering deer tend to carry Leptospirosis, I wouldn't let him do that. Is he at least vaccinated against it?

dogs love to get other scents on them its pretty natural.
