I would like some good homemade Mac and cheese recipes. Maybe with onions and ham? I really don't want Kraft Mac and Cheese. Anyone got a good homemade recipes?

OK this is the 5th time I've put this up and it hasn't been Best Answer YET because of all the Velveeta lovers and Kraft (yuck) lovers. You won't know till you try it, if it's to hard for anybody to make, I'll come and make it for you.,(not really but that sounded good) All my friends,(both of them) and family love this, now I'll stop sniveling and let you be the judge

This is MY baby!

The most requested dish at my house, beside my El Charro Chicken is M&C, so tighten up the aprons throw the cat outside give the dogs a bone and lastly... wash your hands.

Lrg. Elbow 2 handfuls per serving (I use 6 hfs for this recipe)
Boiling salted water, wow that was tough
Grate 1/2 lbs. Extra Sharp and Longhorn Chedder
1/2 lb. Mexican Rancharo Cheese, crumbled
When Mac is done, i rinse, the cheese has enough salt
Alternate layers, add 1 cup milk
Bread crumbles? throw them in the trash
Top with, are you ready? Crushed Cheeto's
350 for 45 minutes
Suggestion: put aluminum foil under your baking dish
You want Ham in it, go for it, Hot Dogs? make it 6 the last10 minutes

INGREDIENTS
1 1/2 cups seashell pasta
1 tablespoon vegetable oil
1/2 cup chopped green bell pepper
1/3 cup chopped green onion
1 (10.75 ounce) can condensed Cheddar cheese soup
1 (10 ounce) jar oysters, drained and cut into thirds
1 teaspoon salt
1 tablespoon Dijon mustard
2 cups shredded sharp Cheddar cheese
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Bring a saucepan of water to a boil. Add the seashell pasta, and cook until tender, about 7 minutes. Drain.
Meanwhile, heat the oil in a skillet over medium heat. Add the pepper and onion; cook and stir until tender. Stir in the cheese soup, salt and mustard. Mix in the macaroni and oysters so they are evenly distributed. Spoon half of the mixture into a 2 quart casserole dish. Cover with half of the Cheddar cheese. Top with remaining oyster mixture and remaining cheese.
Bake covered for 15 minutes in the preheated oven. Then uncover, and continue baking for 20 minutes, or until hot and bubbly.

This one has been in my family for years and i have to make it for every get together. Hope you enjoy as much as we do.
Sautee a chopped onion in a small amount of butter until softened. Boil a 16 oz package of elbow maccaroni and drain. In a sauce pan cube about 3/4 of a large box of velveeta cheese, a can of cream of mushroom soup and the same can filled back up with milk, 1 stick of butter and the onions. Melt until smooth. Take a large casserole dish and combine the melted cheese mixture with the drained macaroni. Cover with the sliced remaining Velveeta. Put in a 350degree oven until cheese is bubbly. Enjoy.

Baked Macaroni and Cheese
Recipe courtesy Alton Brown

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

Mac and cheese is easy but it is all about your personal preference. Cook whatever type of pasta you prefer, use whatever type of cheese you prefer, add the cheese along with milk and butter to a consistency you prefer. Bake in the oven. And you can add whatever you like to it, various veggies, meats, etc.... And don't knock the Kraft. One of my favorite easy pleasy just me home meals is a box of Kraft prepared then I add a can of mushroom soup and a can of drained Albacore tuna. Yum! I suppose you could add this just as easily to homemade. Also try a bottle of salsa or a can of chili.

Try adding some red chili sauce from Hatch, New Mexico, either homemade or from the jar. Not spicy, not hot, just full flavored and really does something to the mac and cheese.

Cook your noodles, add velvetta cheese a little bit of milk and a large pat of (real butter) salt and pepper to taste.
You can easily add ham to or bacon to this - it is a easy and great way to make homemade Mac. and Cheese.

Chili Mac:

You can't go wrong with a scholastic classic. And it makes an easy dinner for school nights.

1 pound ground round
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3 garlic cloves, minced
2 cups cooked elbow macaroni (about 4 ounces uncooked)
1/2 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon black pepper
1 (14.5-ounce) can whole tomatoes, undrained and chopped
1 (15-ounce) can kidney beans, drained
1 (8 3/4-ounce) can whole-kernel corn, drained
1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1 cup (4 ounces) shredded sharp cheddar cheese

Cook first 4 ingredients in a large Dutch oven over medium-high heat until browned, stirring to crumble beef. Drain well; wipe drippings from pan with paper towels. Return beef mixture to pan; stir in macaroni and next 9 ingredients (macaroni through tomato paste). Bring to a boil; cover, reduce heat, and simmer 20 minutes, stirring occasionally. Spoon onto each of 8 plates; top with cheese.

Yield: 8 servings (serving size: 1 cup beef mixture and 2 tablespoons cheese)

mac and cheese pie
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
2 cups small broccoli florets
4 eggs
1 cup cubed ham
1/2 cup KRAFT Shredded Cheddar & Monterey Jack Cheese



PREHEAT oven to 350°F. Spray pie plate with cooking spray. Cook Pasta in boiling water until tender, adding broccoli during last 2 min. of cooking time; drain.
MEANWHILE, beat eggs in bowl. Stir in Cheese Sauce and ham until well blended. Pour egg mixture over pasta; stir to combine.
SPOON into prepared pie plate. Sprinkle with cheese. Bake 30 min. or until set and golden brown.

cheddar mac and ham casserole
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 cup frozen peas, thawed
1 cup cubed OSCAR MAYER Smoked Ham
1/2 cup milk
1/2 cup KRAFT Shredded Mild Cheddar Cheese


PREHEAT oven to 400°F. Prepare Dinner as directed on package. Add peas, ham and milk; mix well.
SPOON into 1-1/2-qt. casserole; sprinkle with Cheddar cheese.
BAKE, uncovered, 15 min. or until heated through.

LASAGNA MAC AND CHEESE
1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner, prepared as directed on package using Light Preparation directions
1-1/2 cups spaghetti sauce
1/2 lb. lean ground beef, cooked, drained
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
2 Tbsp. KRAFT 100% Grated Parmesan Cheese

PREHEAT oven to 350°F. Spoon half of the prepared Dinner into lightly greased 8-inch square baking dish.
TOP with half each of the spaghetti sauce, meat and shredded cheese. Repeat layers. Sprinkle with Parmesan cheese.
BAKE 20 min. or until heated through.

HAM AND CHEESE MAC SKILLET
2 cups water
2 cups (8 oz.) elbow macaroni, uncooked
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
2 pkg. (6 oz. each) OSCAR MAYER Thin Sliced Smoked Ham, cut into bite-size pieces
2 cups frozen mixed vegetables, thawed

BRING water to boil in large skillet on high heat.
STIR in macaroni. Reduce heat to medium-low; cover. Simmer 8 to 10 min. or until macaroni is tender.
ADD VELVEETA, ham and vegetables; cook until VELVEETA is completely melted, stirring frequently.


CHEESY BACON AND TOMATO MAC

1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1/4 cup OSCAR MAYER Real Bacon Bits or crumbled bacon
1 tomato, chopped (can substitute sasla)

PREPARE Dinner according to package directions.
STIR in bacon bits and tomato.
