The cheapest is probably Eurolines, a bus company that takes you to downtown Gent.
For a tad more sophistication, take a train to the coast, ferry to Oostende, where you can hop on a (cheap, clean, Belgian) fast train to Gent.
Remember Ghent is called Gent in Dutch, it will help when searching the internet.

Hitch to Dover, ferry to France, then hitch again. Why Ghent, not much there.

You can try the national express, incase you don't know its a coach service which has a main termination/departure point in London Victoria... not sure *how* cheap it is but its worth a go. http://www.nationalexpress.co.uk get to see lots of the continent on your travels.

Probably the cheapest option is an overnight Eurolines bus - see http://webapp.eurolines.be/Eurolines/index.asp?id=1 (UK contact address on the bottom).
