My fridge is broken, and I am trying to freeze as much as I can

You can freeze most firm cheeses like Cheddar, Swiss, Montery Jack, etc. The texture may not be the same when it's thawed, but you can crumble it and use it for pizza, casserole toppings, etc.

If you have the time (with a broken fridge -- I know, what's time?), pre-shred the cheese and freeze it that way. The texture is much better, I've found, than just freezing a block of cheese.

Cream cheese and semi-soft cheeses like Brie don't do very well in the freezer. Their texture tends to change and the taste isn't quite the same.

Freezing cheese is a terrible idea if you care about the texture and taste of the cheese. It will become crumbly and dry and the flavor will dull. That said, if you're just buying bargain bin cheese to make macaroni for the kids then go ahead and freeze it while it is on sale. Just don't freeze a nice artisan cheddar from the cheese shop.

Also, when my fridge was knackered but my freezer worked, i put a load of ice (from the freezer) on the middle shelf of the broken fridge, put a bowl in the bottom to collect drips and put the stuff in the top. Works fine if you keep the door closed most of the time.

You can freeze cheese - you can freeze almost anything apart from fruit - good luck with the fridge.

even putting cheese in the fridge will usually kill off the live bacteria that make the cheese.

put your cheese in the freezer and i weep for cheesekind ;)

yes it does freeze but is pretty rubbash when it thaws out again

Yes you can,but it does go rather dry and crumbly.A good tip is to grate it before freezing,then separate into portions.When defrosted mix with a little mayonnaise and finely chopped spring onion.Makes a delicious sandwich filling,and great on a jacket potato.

hi you can freeze most solid cheeses but soft cheese's usually become icy, its all so not wise to freeze cheese's with things added like mushrooms! also cheese will go crumbly and great for soups and sauces after freezing

yes. I freeze my cheddar when I buy large blocks. I cut it up into smaller blocks, put it in a freezer bag, and pull out the small blocks as needed. It does tend to be more crumbly, but it still works and tastes fine.

You can, but it just doesn't come out the same, I froze some swiss cheese and when it thawed, it tasted the same, but it seemed to get kind of flakey, as if it had dried out some.

Yes, you can! I do it all the time. If its shredded it will still freeze but it will crumble a little if you aren't careful.
