I think they are dried eggs and then powdered. Must be done a special way. They are good to keep in your pantry because they have a longer "shelf life". I don't know if there is a difference in the nutrition.
My next door neighbor has an awesome cake recipe that you have to use powdered eggs for or it is not as good. She has to get them in a health food store.
Did you try them at the restaurant? Wonder how they tast.e

Well, I know what that is ! First used in military MRE packs in WW2, powdered eggs evolved into the strange textured instant replacement for fresh scrambled eggs. You add water to the powder and stir-- voila!You get the most nasty tasting blob of yellow " /'-=[ " - you ever had in your life. Large amounts of salt,pepper--tabasco could not disguise its flavor or texture. It is best used for baking in cakes and breads when fresh eggs are not available. I find it amazing any restaurant offers it on their menu ! Do ask the cook how it is prepared! Then use your own judgement .
