Ouzo, Reki, and Ayran, Absynthe all are liqueurs, and they all turn white if you add any temp. water, or ice when it starts to melt.
Don't know why, guess the chemistry. I would love to know the answer as well..will try and find out from a Greek friend!
(notice I said Absynthe not Absinthe..2 different things-the synthe is legal in the USA.)

Try sticking with ice or cold water. The reason ouzo turns white, according to Wikipedia and other sources:

"When water or ice is added to ouzo, which is clear in color, it turns milky white; this is because the etheric oils are soluble in alcohol but not water. Diluting the spirit to less than around 40% ABV causes it to separate into an aqueous and an organic phase, whose fine droplets scatter the light."

It could be that by adding HOT water, you are making the oils soluble by the additional heat.

Because it's pasta. Pasta is normally yellow.
