Tomorrow's Eid, and I've already planned a sumptous main dish. But, I'm still looking for a great side dish of chicken. I bought some star anise recently, and will like to make use of that thing.
Can you help me, please?

ANISE CHICKEN

2 to 3 lbs. chicken fryer, cut up
2 c. soy sauce
2 c. sugar
2 c. peanut oil
4 to 5 slices ginger
MSG to taste
4 to 5 star anise

Put all ingredients, except chicken, in pan and bring to boil. Put in chicken and boil again. Cover and cook 50 minutes on low heat. Stir occasionally to make sure all pieces are covered. When done, turn off heat. Can leave in pan for a few minutes more or take out and let cool enough to touch. Then shred the chicken, discarding all bones. Pour a little of juice on chicken or put juice in a crust and let each person pour own.

i call this chicken mole

Ingredients:

4 Tbsp oil
1 Tbsp sunflower kernels
1/4 cup sesame seeds
1/2 tsp cumin seeds
1/2 tsp aniseeds
1 cup blanched slivered almonds
1/2 cup raisins
1/2 tsp dried oregano
1/2 tsp cinnamon

1/4 tsp ground cloves
1/2 tsp ground coriander
1/3 cup chili powder
1 cup canned Italian tomatoes, drained, seeded, and chopped
2 medium onions, chopped
3 cloves garlic, minced
1 tsp salt
Freshly ground pepper
1 tortilla, torn into small pieces
3 cups chicken stock
2 ounces unsweetened baking chocolate, grated
4 whole chicken breasts, split
4 chicken thighs
4 chicken drumsticks
Garnish: chopped fresh coriander Instructions:

In a small skillet, heat 1 Tbsp of the oil over moderate heat and in it cook the sunflower kernels, sesame seeds, cumin seeds, aniseeds, and almonds, stirring constantly until the sesame seeds and almonds are golden, 2 or 3 minutes. Purée the mixture in a food processor.

Add to the processor the raisins, oregano, cinnamon, cloves, coriander, chili powder, tomatoes, onions, garlic, salt, pepper, the tortilla, and 1/2 cup of the stock and purée until smooth.

Transfer the purée to a saucepan. Stir in the remaining 2-1/2 cups stock, bring the sauce to a simmer, and add the chocolate. Cook the sauce at a gentle simmer, stirring occasionally, to melt the chocolate.

While the sauce is simmering, rinse the chicken quickly in cold water and dry with paper towels. In a large casserole, heat the remaining 3 Tbsp oil over moderately high heat and in it sauté the chicken in batches until each piece is golden brown on all sides. Set the pieces aside on a plate as done.

Put the chicken and any accumulated juices in a flameproof casserole, placing the dark meat on the bottom. Pour the sauce over the chicken. Simmer, covered, until the chicken is tender, about 30 minutes.

Place the chicken on a warm serving platter. Pour the sauce over the chicken, garnish with the chopped fresh coriander, and serve

STEAMED ANISE CHICKEN

Serves 4

2 Limes
1 tb Brown sugar
4 Star anise, divided
1/8 ts Crushed red pepper flakes
2 tb Soy sauce
2 tb Low-sodium soy sauce
1/3 c Water
4 Boneless and skinless
Chicken breast halves

Squeeze the juice out of the limes. Reserve the peels. Measure 3
tablespoons juice.

In a small saucepan, combine the lime juice, brown sugar, 2 star anise,
crushed red pepper, soy sauce and water. Bring to a boil, reduce the
heat and simmer 4 minutes. Remove from heat and cool.

Put the chicken in a glass dish and spoon half of the soy mixture over,
turning to coat. Marinate at room temperature 1 hour, or cover and
refrigerate for longer marination, up to 24 hours.

When ready to steam the chicken, put the lime peels, 2 star anise and
about 8 cups of water into a large pot and bring to a boil. Fit a
steamer basket or rack over the top. Remove the chicken from the
marinade, discarding the leftover marinade, and place in the steamer.
Cover tightly and steam about 20 minutes, or until the chicken is no
longer pink in the center.

In a small saucepan cook down the remaining soy mixture until reduced
to about 2 tablespoons. (You can add a little water if you reduce the
mixture too much.) Spoon over the steamed chicken.

Well. You can try marinating pork chops in the star anise (whole), soy sauce, garlic, and a little sesame oil. After it has sat in a plastic bag overnight in the fridge then grill the pork chop. You can use chicken as well, but the pork works the best. Using star anise is tough, since the licorice like flavor is not widely liked.

Most of the dishes I've seen that include star anise are in Chinese cooking. You could do a search re same.

You can go to food network's website or Kraft's website and they have a search engine where you put ingredients you have and they provide recipes. Good luck
