They should taste very similar, but it turns out that apple cider is my favorite juice and apple juice is my least favorite.

Apple cider is not filtered, therefore it has the apple "bits" in suspension. These give it a much heartier, more robuse flavor, which may be what you find appealing.

Also, apple juice may be sweetened or diluted, which ruins the flavor even more.

Apples for apple cider are picked sooner than ones for apple juice. they have a more tart taste to them. Also, most apple ciders do not pasteurize their cider, so if allowed to sit out long enough, they will ferment, giving it a nice flavor with alcohol benefits.

I believe it's because it has more of a "tart" flavor. The juice I find too sweet.
