Red snapper grilled with butter, lemon and pepper, served with Pontchartrain sauce:

* 1/4 cup butter
* 8 fresh mushrooms, sliced
* 8 medium shrimp - peeled and deveined
* 1/4 cup whipping cream
* garlic powder to taste
* black pepper to taste
* 2 teaspoons Madeira wine

DIRECTIONS

1. In a medium saucepan, saute mushrooms in 1 teaspoon butter until tender. Stir in shrimp, and cook until pink. Transfer to a bowl.
2. In the same saucepan, melt the remaining 2 teaspoons butter. Slowly mix in cream. Stir in the shrimp and mushroom mixture, and season to taste with garlic powder and black pepper. Simmer over very low heat until thick. Just before serving, stir in wine.

Salmon - with lemon, butter, dill or rosemary, fresly ground black pepper.

Trout almondine - Had it for the first time eons ago in Yosemite - but never prepared it myself.

Monk fish - Had it at an Italian restaurant (Piero's) in So California - wish I knew how it was prepared and get their recipe.

Whitefish from a fishmarket in NYC, with bagels and cream cheese - (nova scotia is good too).

Gefilte fish - (sorry, only my hungarian grandma made it) with horseradish and beets or borscht.

Sanpper with lime juice and butter.

Boy, do I love fish! I really love Orange Roughy, grilled, with butter an garlic sauce. I enjoy a freshly tossed salad with many different greens, and a creamy Italian dressing. You made me hungry, now, darn you!

Rainbow trout. Don't care for the little bones, but I like it because I catch my OWN! I take the fish & stuff it with minute rice and a little bit of lemon juice & lemon pepper and a piece of ice wrap it in aluminum foil and cook it on the barbeque grill. (well, I don't my hubby cooks it I catch it!) MMMMMMMMMMMM!!!!!!!!!

i like cod yet via fact i'm attempting to help the shares i've got switched to monk fish which i think of is comparable tasting. i like ideal tuna steaks and salmon, none of that tinned stuff. I additionally like extensive quantities of prawns yummmm
