Yes, when you cook shrimp with the shell on, it holds more moisture, and flavor because the shell is like a container. The shell itself also has flavor, it acts like a chicken or beef bone when boiled like when making homemade broth. I keep my shrimp shells, and lobster shells even when I go to a restaurant. I take them home and make broth. Just frying unshelled shrimp is good, just they need to be cooked super fast so you can keep as much moisture in them as you can. Happy cooking.

There is no difference in flavor really, it simply depends on what you will use the shrimp for. A scampi type dish of sauteed shrimp with garlic and butter is definitely a shell off dish, however if you wish to dip the shrimp in cocktail sauce the tail on is easiest to handle.

I've never noticed, and I like them both. However, if you like the shell-ons, save those shells and make seafood stock! Bonus!

then shell off so
there would be some taste difference but
